Hi everyone! I finally got with the program and realized that there was a new thread for this week... D'oh!
I'm a vegetarian too! It is pretty hard to make sure that I get enough iron and protein, but I mostly resolve it by having Total cereal for breakfast almost every day (I think of it like a multi-vitamin, but in cereal form

) and adding tofu to basically half of my meals. I also eat a lot of beans, and I drink soy milk instead of regular milk. I think I've been getting enough protein, but when I first stopped eating meat (a little over 3 years ago) I definitely didn't think about trying to keep a balance of all the things I ate... I probably ate all carbs and dairy (like cheese) for the first few months!
