My latest version of mashed potatoes: Microwave a large potato until tender. Peel, add salt, and mash together with 2 - 3 tablespoons of salsa and fat-free plain yogurt until it is a creamy consistency. Yummy!
I don't have time when I come home from work to slave over the stove, so I'm big on using the microwave to cook my veggies or zap some frozen ones.
chickennugget, I am trying that cauliflower recipe next week!
