Overall, I definitely think you had a nice healthy eating day (woot!), but I agree that you could certainly add more veggies.. and definitely some fruit.
As far as adding calories, you got wonderful advice.. but here's one from me

I would get rid of the lite bread, personally! I've never been a fan, all the ones I've tried have been more "air like" and not so filling. You can add HEALTHY calories by getting a nice healthy true whole wheat bread. You're adding whole grains to your diet, a more filling bread that stays w/ you longer.. and adding a few calories.
As far as veggies- are you a green bean fan?? What about some yummy stir fried green beans? My grocery store has tons of stir fry sauces in the asian dept.. my particular one is spicy, and 35 calories per tablespoon. I just take a few (i loooove beans) servings of green beans (frozen or fresh) and steam them.. then toss with some of the stir fry sauce. I eat these a LOT.
Mmmmmmmmm.
