I have been making a lot of cabbagey soups lately and I am telling you it is fabulous.

Here's a couple of healthy recipes in case anyone is interested

I add shredded cabbage to chili, spaghetti sauce, sloppy joes, stir fry's... I eat it steamed and raw and stirfried and and and. I lurve me some cabbage!

My local grocery store has locally grown cabbages this week. The one I bought is 8lbs ! I could barely get it in a produce bag. I bought it to make chicken vegetable soup but since I definately won't need to entire thing for soup, I'm going to try roasting some tonight. I have really high hopes for roasted cabbage, hopefully I won't be disappointed.

I made my own version of this tonight...very tasty! Even the kids liked it...when I lied and told them it was "lettuce". They think they don't like cabbage. They also insist they love chicken, except it's actually steak. And of course they hate steak...which is chicken. Some day they'll get it!

Anyway...

I browned ground turkey, added taco seasoning, tomato sauce and diced tomatoes. To that I added chopped cabbage and cooked for about 10 minutes until tender. Easy!
