Fresh apples, various pumpkin dishes I eat instead of pumpkin pie (like lowfat pumpkin custard!)

I LOOOOOVE this time of year. It's my favorite weather, favorite foods.

I get a veg box delivered to my door every week with freshly grown veg. This week I got a butternut squash and I have no idea what I am doing with it. Any ideas?

You can do a lot with pumpkin! Pumpkin bread, cookies, pancakes, waffles. All on the healthy side, of course! You can find recipes out there that use whole wheat, and other substitutes (like using apple sauce in place of oil, for instance) that make it less fattening.
I also give pumpkin to my cats sometimes, lol

a friend at work brought me a honey crisp on Thursday, yum!!

I'm making a butternut curry squash soup tomorrow, I saute onions with a little curry; take the squash and peel, chop it, boil in stock; add I think one apple, then blend it. add salt and pepper. is very good.

a couple of weekends ago I roasted beets, then made an orange vinegar onion dressing and let it sit overnight, very good. I used the greens too, sauteed with garlic and onion. great side dish.

I second the acorn squash, roasted in the oven with some cinnamon, nutmeg, butter, I eat it right out of the husk (rather than scooping it all out).

apple picking!
we picked some fugi apples. i love those from the store, but straight from the farm...sooo much better.
we are house hunting now. i'm so excited to get out of apt and into a house. we can garden and plant fruit trees. we had 2 apple trees when i was a kid. grandma made the best apple butter, apple crisp,pie, dehydrated 'chips'.
we could make 'apple crisp' just by baking apples w/spices and low fat granola sprinkled on top.
