I had a salad from Chicken Dijon - romaine, radishes and green onion with shredded chicken breast. I drizzled just a little lemon garlic dressing. It was delicious and filling too!
Today's lunch is leftovers from last night -- half a chicken breast and one stuffed shell with spaghetti sauce, broccoli, a salad with blue cheese and dressing, and an apple. And I made a pot of amazing soup -- coconut curry squash. It's keeping hot in my Thermos, and I'm really looking forward to it for lunch!
Leftover shredded BBQ chicken (we had sandwiches last night), tons of romaine, shredded red cabbage, carrots, onion, grape tomatoes, a few tortilla strips (love crunch - it's 70 calories, but worth it to me!) and a little bit of fat free ranch dressing.
I'm making tacos for dinner tonight, I'll use the leftover seasoned ground turkey for a taco salad tomorrow Similar to today, but I'll use green salsa for the dressing. Maybe sprinkle a little low fat cheddar on top.
today's lunch is a toasted tuna sammich, on "Ancient Grains" bread -- gee I hope that doesnt' mean it's super stale made with green pepper cuz that's all i had to add crunch! and a little bit of a bean soup about 1/2 cup, and an apple
I was having a bowl of Chicken and Dumpling soup today, but I put in 2 very, very, VERY stale saltine crackers and had to throw the soup away due to how absolutely horrible it tastes. I don't know what happened to those crackers, but they are in the trash now. Unfortunately, I ended up with a ham and cheese lunchable. Need to plan better and buy some healthier stuff.
All these salads sound really good, but I have this really weird thing. I don't think salads I make at home are nearly as good as the ones you get at a restaurant. Could it be the full fat dressing and loads of cheese? Even the lettuce tastes better. Does everyone buy the lettuce head and chop it up, or buy bagged mixes? What type of lettuce do you normally use?
For salads, I usually splurge on bagged baby greens -- mesclun mix and/or baby spinach. I think fresh ground pepper and a little salt make a world of difference and a lot of folks don't try that at home. I feel I do need a little "sauce" too but I generally don't resort to bottled dressing. I generally eat salad greens at dinner time rather than lunch, and I use them to stretch out more calorie dense foods.
I often enjoy a small bit of entree as a salad dressing substitiute. I won't hesitate to dab chili or split peas soup on my salad. I also will sprinkle stir fries on my salad. If all else fails, a little bit of EVOO.
