Today I brought 2 cups of baby spinach, 2 cups salad mix, 1 cup shredded cabbage, 1 cup sliced mushrooms, 1 cup broccoli florets uncooked, 2 oz flank steak cut into thin strips, 2 tbs blue cheese crumbles and Lite Balsamic Vinaigrette Salad dressing.
I toss all the veggies together, top it with the steak and blue cheese and drizzle just a taste of the dressing on top.
It is THE best lunch ever! The best part?? I get to eat an insane amount of food for 350 calories. I had to double check my calories on DailyPlate because I felt like I was cheating. Nope.
I eat some variation of this every day...some days the protein is chicken, or 2 hard boiled eggs....I'm not bored with it yet but would love some other ideas of what you all bring to work for your lunch.
I had leftovers. We had Mexican Fajitas last night at a favorite restaurant. I did not notice the insane salt last night, but boy did it pack a punch this afternoon! LOL! I wish I could make fajitas taste as good as the restaurants without all the salt, because come on....chicken, peppers, onions...all super healthy! (I ditch the tortillas, guac, sour cream, rice, beans, etc.)
Sounds like a delicious salad. Almost like something you'd get in a restaurant.
I have no idea what I'll have for lunch today. Its 11:40 here and I haven't had breakfast yet . Maybe I'll pick something up. Brown-rice sushi sounds good.
Normally, I have left-overs but I don't have anything left currently.
3 oz or so of canned salmon with half an oz of lemon juice and some black pepper on it. 3 oz baby spinach, 3 oz carrots, 3 oz grape tomatoes--I just eat these veggies from the bags I bring them in. Half a grapefruit.
That's what I have for lunch nearly every day, though the meat portion varies--it's usually leftovers like ground turkey or chicken breast or something.
I like my lunches, though to someone else they might look unappetizing. I don't do too much to fancy them up, but the fresh veggies taste wonderful to me, just as they are.
I eat 4 mini-meals, including two lunchish meals -- one around 10:30 and another around 2:00.
For my morning minimeal I had what I affectionately call "fiber pizzas" -- very very high fiber crackers topped with salsa and nonfat cheese and toasted (150 cals). Plus a cup of blueberries (frozen/heated in micro plus a pack of stevia, 75 cals).
For my PM lunch I had what hubby and I call a collation. I heat a can of light soup of any variety (160 cals/can) and a whole package of oriental frozen veggie mix (5 servings, 20 cals each for a total of 280 calories). It's a lot of volume so when I don't finish it, I eat the rest with dinner to keep the calorie counting simple.
These are very standard meals for me when I'm home. I have slightly different standard meals when I spend the day at work.
Lunch was leftover macaroni and cheese (only half cup, which is about as much carb as I can tolerate), with roast beef crumbled into it. Then a two cup green salad with pistachios. Finished with miso soup with seaweed. Yum!
I had a Smart Ones lasagna and a small side salad. A few more cals than I would have liked, but I was pressed for time. Making up for the extra sodium with tons of water!
I packed a salad and plum today... I'm sick today and could only make myself eat the plum and a couple bites of the salad. Between lack of appetite and the sore throat I couldn't force much more than that down... I'll try to eat more for dinner.
I had the same lunch I have every day - a really big salad with baby lettuce, baby spinach, carrots, cucumber, radish, onion, chicken, hardboiled egg, avocado, dressing and Bacos. (I think I'm missing something! lol!)
Lunch is my main meal of the day and even though I've been eating the same thing almost every day since November 2, I still enjoy it and look forward to it.
When I do have something different, it's usually some homemade split pea soup (I use beef stock so it's not as salty as when it's made with ham), homemade chicken soup with some noodles and lots of broccoli or white clam sauce or shrimp scampi with a small portion of pasta and lots of broccoli.
Today I had a toasted whole wheat bagel thin with homemade curry chicken salad (chicken breast, curry, light miracle whip and salt/pepper), 2 cups of fresh strawberries and a small tangelo. (I ate my veggies at supper today)
