I just started trying to lose weight again after not exercising for months. I have started VERY small, because my stamina sucks and have done so for four days in a row. The first day I tried Insanity fit test, and only got nine minutes in and threw up. Pathetic... I know. The second day I tried it again (this time on an empty stomach) and did a little more, and felt good. I still didn't finish it, but I got a little further. That day I also played an hour or so of Samba Di Amigo on the Wii which has a lot of arm movements. On the third day, I did 16 minutes on Flirty Girl Fitness which mostly consisted of squats and lunges and then on the fourth day I played two or so hours of Wii sports and Samba Di amigo.
I haven't changed what I eat, and have been eating one or two meals a day. Still, this is very discouraging.

Any time you switch up your workouts, the scale can blip due to muscle water retention (basically, if you're sore, you're retaining water). There are a lot of other reasons you might retain water, too - we have a great thread here:
Retaining water, huh... That didn't occur to me. Actually, my soreness has lasted the entire time I've been exercising. I could hardly stand the last two days, but I pushed myself to do a little exercise anyway. Thanks.
Pardon me if this seems impertinent, but you look very young in your picture and I notice your height is well below average. Is it possible that you are still growing?
People who are still growing can still develop an eating plan and lose weight/change their shape, but the things they need to do are different.
Regardless, you don't want to exercise until you can't do any more--as someone very wisely said here (and I am sorry I can't remember who), that means you end every session feeling like a failure. Have a reasonable plan--and it can be tiny. When I started, I could only walk half a mile or go on the exercise bike for 5 minutes! Now, I go on the bike half an hour every day and walk/jog 3 miles every day. So start with something tiny that you enjoy, and then every week kick it up a tiny little notch. In six months you will be in amazing shape, I promise.
As mentioned before it has to do with water retention in your muscles. It would be virtually impossible to put on 5 lbs. of fat in 2 days, you would have to consume 17,500 calories (and yes I meant seventeen thousand and five hundred!) additional calories over what you burn in a day. You've gained weight on the scale but not "gained weight" in the way that people usually talk about it (gaining fat and getting bigger). A suggestion though: you should probably start off exercising by doing something easier. Your workout shouldn't be making you throw up! Also if it's that hard you're not very likely to stick with it.
I gain 5 pounds almost every day between the moment I wake up and weigh in, and after a meal and a shower :P And that's not including muscle water retention, muscle gain, etc.
Try eating smaller, more frequent meals. It'll increase your metabolism, get nutrients to those muscles and make them feel better. Drink a LOT of water, so that your body doesn't feel like it has to retain extra.
Remember, eating and drinking too little is surprisingly BAD when it comes to weightloss!
You say you are only eating one to two meals daily. The reason for your weight gain is probably your body holding on to everything it possibly can so it does not starve. Thus, you are probably retaining lots of water.
I would think for your weight and height you need to at least have 1200 to 1500 calories per day. Then, add on a little easier excersize. Maybe try the "Walk Away The Pounds" DVDs. Or keep up with the Wii games, like Wii Fit and maybe try out Just Dance.
