Good afternoon Ladies (and gents, if there are any)
I had a pack of lovely Sea Scallops that I had defrosted and needed to use today. Being on Phase 1 and all, I looked for a recipe and really didn't find one without carbs, so I made one up.
"Extra Virgin Olive Oil" (for those unfamiliar with Rachel Ray and her "isms")
Heated the pan, put a TBSP of EVOO, 3 cloves of garlic diced, 1 yellow pepper, and 1/2 pound of Asparagus raw chopped in 2" pieces, and zested some lemon - then sauteed until everything was cooked tender but not soft adding a small amount of salt and pepper to taste.
Added another TBSP of EVOO and added 1 lb of luscious Sea Scallops (from Vital Choice) When cooked thoroughly, I split the pan into 2 servings and shared with my son. We topped it off with some grated Dubliner Irish Cheese. Yum - O!!!
