Wave 1 - Roasted Zucchini with Thyme

    Roasted Zucchini with Thyme

    3 zucchini, quartered and cut into chunks, or use a mixture of zucchini and yellow squash
    1 onion, sliced
    1 tablespoon olive oil
    1 teaspoon thyme
    salt & pepper

    2 servings if this is your only vegetable for the meal

    Preheat oven to 450.

    Toss zucchini, onions, salt, pepper ,thyme and olive oil on a baking sheet.

    Roast 30 minutes, stirring halfway through.
