B-fast: IP chocolate shake (I just got them back, they weren't selling any for a month, I've missed it!)
Lunch: IP lemon pudding
Snack: Chocolate Ice Cream!! Check the new threads if you haven't seen the recipe, it's perfect :')
Tea with 1/2 cup of soy milk (yes, I'm having 1/2 a cup of unsweetened organic soy milk everyday, it hasn't slowed me down since there's only 1.5 net carbs in that)
Dinner: Cauliflower fried rice with shrimp "take out" style.
this is my first day on IP...
Bfst: Vanilla shake
Black coffee
Lunch: Steamed broccoli with fresh lemon sea salt and cracked pepper
4 oz Turkey burger w/1 tsp olive oil sea salt and cracked pepper
Snack: Bar with hot coffee
Dinner: steamed cauliflower and brocolli fresh lemon sea salt and crackedpepper 4oz beef burger
Bedtime: Chocolate Drink
Phase 2 today...
Coffee with a splash of vanilla rtd and sugar free almond rica
Syrup (just tried this for the first time today- very yummy!!)
Snack- caramel nut bar
Lunch- pork chop a la Liz (thanks for the idea it was very good!) Fluffy Potato Rolls
Preheat oven to 400
Beat 2 Large Egg Whites until frothy
Mix in:
1/4 teaspoon baking powder
Pinch baking soda
Cajun seasoning (optional)
Dehydrated onion (optional)
1 IP Potato Purée Packet
Spoon into a very well oiled mini muffin pan (will make about 9-10) or regular muffin pan ( bigger rolls for burgers etc). About half full. Bake for 8-12 minutes.
If you're looking for a bread fix- this is it!
Coconut Curry Rice 1 tsp coconut oil in frying pan over med low heat. Add two cups 'riced' cauliflower. Season with salt, cumin, mild curry powder. Paprika and or chili powder is optional depending on how spicy you like it.
Supper: Tuna Taco Salad
Iceberg lettuce
Can tuna
Taco Salad Dressing (splash evoo, low carb ketchup, apple cider vinegar & Frank's hot sauce- whisked together)
Stewed Rhubarb:
2 cups Chopped rhubarb
1/8- 1/4 cup water
Stevia packet
Cinnamon, nutmeg optional and to taste...
Add water to small saucepan over medium heat. Add rhubarb and stew until rhubarb is completely mushy. Add Stevia & spices.

The fluffy potato rolls turned out awesome! They have a perfect bread texture and are quite tasty. As well they are visually appealing with a nice golden colored top. I ate them before I read your post so will have to take a pic the next time I make them... but if you have any potato puree kicking around- try them!!- you won't regret it...
I eyeball the ingredients for the taco dressing but roughly
1tsp oil
2-3tsp ketchup
2-3 T apple cider vinegar
And however much Frank's floats your boat... I love spice so I'm pretty liberal...
I'm dreaming of low carb Indian food... have already found a low carb naan recipe that I will be trying out the very first night of Phase 4 hits again! In the meantime the coconut curry rice is assuaging my craving for Indian...
Liz - the 'Blanket' in the Pig in a Blanket is also an IP food. BTW - probably won't make this recipe again.
Any suggestions on how to tenderize Flank Stk? That's what I used in this recipe, and it was really tough.

As to tenderizing a cut of meat - you are talking to a butcher's daughter (he just retired after 39 years!). I grew up on meat! There are a few ways - before you cook it you can pound the h*ll out of it with a meat mallet to break down the muscle fibers or you can score the steak diagonally with a knife ~1" apart. Marinading is another way, but that can be tricky with IP, since a lot of 'commercial' marinades include sugar and you need some time (~1 hour, not much longer though) - you can DIY an acidic marinade with spices and soy, apple cider vinegar, or lemon juice. Also if you overcook it then you will end up with a dryer/tougher cut regardless of tenderizing. Honestly - I usually use a mallet combined with a 30-minute garlic, spice, & soy marinade when I deal with more muscular cuts.

Capricious.....gee the recipe sounds so good.....can you put in enough batter to make the rolls a size for a hamburger....if so is there a difference in how long they stay in the oven? Ohhh I'm so making this this weekend
