I too am a salty/crunchy person and this is still my hardest thing (almost a year after hitting phase 4).
--cucumber slices with babaganoush (if you like garlic!)
--LaRosa Flax Snax (flax and corn chips); 24 chips=19 carbs; I make them into nachos with non-fat cheese and cherry tomatoes and olives and lettuce. So there is a lot more "veggie" than chip proportionately, but I get the "crunch". And I can split one serving with my DH or eat the whole thing (with some chicken) as a dinner on a cheat day.
I also buy products from Netrition and New Lifestyle, they are way cheaper than IP and still low carb. So when I need a "grab and go" I have them in my cupboard. (shakes, bars, pretzels, etc.)
and when you hit your cheat day, you can have the popcorn!
