Last night I had leftover chicken and stout stew, and tonight the fiance is making some chicken. We have all of those sweet potatoes, so will have those, and probably some zucchini before it goes bad.

Today will be a high fat and calorie salad (with avocado, olives, cashews and hemp seed. So good). I'll be cutting the avocado in half and trying it over spinach today to increase the amount and decrease the calories.

I had turkey chili with added veggies to round it out (yellow squash and spinach), plus 1/2 ounce of cheddar cheese. (400 calories, estimate)

Chicken with sauteed mushrooms, green bell peppers, bit of barbecue sauce then topped with pepper jack cheese and broiled until cheese becomes browned.

Last night I had a lean beef burger patty (I probably have a beef burger once a year or less!), and a salad.

Yesterday I made a chicken, zucchini, corn layered enchilada casserole, so that's getting baked for tonight's dinner.

Tonight is a fast day, so a light dinner. I'll be making pho, about 400 calories.

Saturday we went out to dinner and I had sesame salmon, parmesean mashed potatoes, fried spinach, and shared a slice of chocolate mousse cake. Calories don't count on birthdays

Sunday we had roasted chicken, mashed potatoes, gravy, green beans and salad. About 800 calories.

A different lentil salad (Moroccan) with arugula and an avocado (to cut the heat because I put to much cayenne!) Then I worked out and ate some more vegan cheese, rice crackers, cucumbr and onion and gf banana muffins. ugh

I have never seen black bean pasta. Sounds great. I would love pasta that had something more nutritious to it....might just have to make it myself with some bean flour (I have garfava and chickpea)

Today I had a few snacks (prunes, dried apricot, grapes) and a chocolate banana protein shake after the gym, so that was my dinner so to speak.

Hmm, black bean pasta does sound good! I actually made my own (traditional) pasta this weekend. I made it eggless so my brother could have it, but I think I'll experiment with different flours now. Finally making use of my pasta machine. I imagine black bean pasta is much more filling and protein-rich?

So last night was 4oz of homemade pasta (no idea the calories, since it is not dried it is not equivalent to store bought dried pasta), marinara sauce, mini meatballs, snow peas, and a side salad. Guessing about 850 calories.

Tonight will be grilled chicken with red peppers, mushrooms, tomato, spinach, and feta cheese. 400 calories.

amethyst and noname-The black bean pasta is sooo good! And tons of protein and fiber. Here's a link to the brand's website, I tried the rotini. http://www.tolerantfoods.com/#!product-list/c18gl I'm really impressed you guys can make your own pasta! I've never made it myself. I actually like this black bean one more than the quinoa one I get.
