Wow, smoked olive oil?? That sounds awesome! Is it only at specialty stores?

My favorite is my own version of Chinese chicken salad: I use
Thinly sliced cabbage
Whole wheat thin spaghetti noodles
Diced cucumbers
Cubes chicken breast
Diced red peppers
Ken's light asian sesame dressing
** I always add schriacha hot sauce to it as well

I do a tossed salad with: romaine lettuce, grape tomatoes, sliced baby portabello mushrooms, walnuts, strawberries, cucumbers, green peppers, chunk white tuna and a drizzle of extra-virgin olive oil with some cracked black pepper on top. I usually eat this for lunch.

I love strawberry salad:
Baby spinach, strawberries, walnuts, fat free/or reduced fat if I can't find it Feta. I either use straight balsamic vinegar, make dressing (extra virgin olive oil, strawberry preserves, balsamic), or if I have extra cal allotment, a little bit of poppyseed dressing.
"Summer Salad": Baby Spinach or mixed lettuce, avacado, slivered almonds, fresh basil leaves, feta or goat cheese, black berries. Dressing is usually homemade or lite italian.

I like red leaf and green leaf lettuce with onion, cucumber, carrots, radishes. I always add some protein (cold chicken or steak usually) and I also love adding a chopped hard boiled egg. I have to have Bacos - I know they aren't great for you but I really, really miss the crunch when I don't use them. For dressing, I like either Catalina or Ranch (low or no fat versions).
Before my I started my current plan, I added 1/2 avocado (about 2 oz) and a small portion of cold pasta, rice or potato. I like the extra flavor and texture, and I used to think that I needed the extra starch to be fully satisfied with my meal, but I'm on a very low carb plan now and don't miss the starch like I thought I would. It's also a low fat plan, so no avocado, either - but I get to add all this stuff back in eventually, if I want.
For a non-lettuce salad, I like this one http://smittenkitchen.com/2009/05/broccoli-slaw/ although I use sunflower seeds instead of almonds.

I love having salad. Great thread idea!
Here is my garden salad:
I use baby spinach and cut up romaine lettuce, sliced green/red/yellow peppers, tomatoes, cucumbers, red onion, boiled egg (crumbled), turkey bacon (chopped), homemade whole wheat bread crumbs, grilled chicken or breaded chicken, and add Italian dressing. LOVE it!
Taco salad:
Chopped up baby spinach, and romaine lettuce, diced tomatoes, cucumbers, onions, and yellow/green/red peppers. Mixed well, then I put on top ground turkey that I season with homemade salsa (tomatoes, onions, cilantro, lime juice and pepper), and then add shredded cheese on top (not a lot), and guacamole (avocado, cilantro, tomatoes, and lime juice).
Caesar salad:
Baby spinach, chopped romaine lettuce, boiled egg (crumbled), turkey bacon (chopped up), tomatoes, lettuce, homemade croutons, fresh grate parmesan cheese, grilled chicken and caesar dressing.
I love seeing everyones ideas!

iceburg lettuce,slice turkey pepperoni, sliced pepperoncini, sprinkle of parmesan,black or green olives, black pepper, and lite italian dressing
