Question How do you get all your veggies in?

I don't think I am eating enough veggies and I wanted to see how others were getting theirs in.

Here is my normal day:

Breakfast - mim
Snack - string cheese
Lunch - spinach salad (3 cups) or leftovers (~1 serving)
Snack - varies but is never a veggie
Dinner - romaine salad (2 cups) and main course with usually at least 2 servings of veggies on the side.

On days I have a salad for lunch I think I get enough (or close to it) but when I don't I don't think I am.

Any thoughts?

Count the net carbs, if it is 12-15 for veggies you are fine. I eat a salad for lunch and veggies with dinner, sometimes also with a salad.

No its usually not that many carbs. Spinach and romaine have low carb counts as does broccoli and cauliflower (my veggies of choice for dinner). I need to eat more of them I just dont know how. I'm not a big raw veggie eater but I guess I need to get over that...

I usually try to mix alot of veggies in my salad, thats how i can reach about 10 carb from veggies, I can never seem to complete 20 a day

But I add avocado's (one has about 3.5) & green peppers, cucumbers, romaine lettuce, olives, tomatoes. Usually very less romaine lettuce, compared to all other vegetables. And then I would broccoli at dinner. So, i guess try to make a bigger salad with lots of vegetables?

i eat lots of stir fry. i put spinach or mushrooms in my scrambled eggs, and i sneak pumpkin in everything i can. i still am not eating enough veggies though, and its showing

I don't care for many raw veggies so I eat most cooked. With butter. Mmmm. I do like salad though, with a good dressing on it.

I have salad at lunch,usually with baby spinach, some cucumber, radish, bell pepper, tomato, celery, green onion, sliced ham and ranch. Then if I do stir fry I use jicima, green onions, bell pepper, jalepenos, cauliflower, celery, radish, shredded cabbage and beefstrips. I add ginger and cinnamon with a small sprinkling of splenda to give it a real spicy asian flavor.

I make a broccoli salad with chopped red onion, bacon, pecans with a mayo/vinegar/splenda (eeek - I know some people don't approve of splenda, but it's only 2 packets) dressing. I usually make a fairly big bowl of it and we can eat it over a couple of days. You probably have seen this salad made with raisins but if you leave them out it's still an excellent salad.

I make that same broccoli salad all the time! I put very little splenda in it though, just because it seems to mess with my weight loss. It's soooo good though!

so do you have to shred the broccoli?/ i never thought of making a salad out of broccoli..and how do you make the dressing?
