I'm searching all kinds of cookbooks for low-fat and no-fat variations of the foods I love so I can make this a plan for life instead of a "Diet".
I am a snacker, a muncher,a drooler over rich,gooey,salty,crunchy and yes...SWEET stuff.
So thought I would share some of my favorites with all you people who are in this same crowded boat with me,
Lemon Torte with berries...80 cal. 0 fat. 4 protein. 17 carbs. 0cholesterol. 70mg sodium. 190mg potassium.
Nonstick coating spray
1 4-serving size of sugar free lemon jello
1/2 c. boiling water
1/2 of a 6-oz. can of (1/3c.) of frozen lemonade concentrate,thawed
1 12oz. can of evaporated skim milk
2 cups of cubed angel food cake
2 cups fresh or frzen berries (I love blueberries with this)
1 T. of sugar...only if you use fresh berries
Spray bottom only of a 8" springform pan(or use a pie pan)
In a large bowl disolve jello in the boiling water, stir in the lemonade concentrate and evap. milk.
Cover and chill in the fridge for 1 and 1/2 hours
After chilling beat with mixer on medium for 5 min. until fluffy
Arrange angel food cake on bottom of pan, Pour mixture over, cover and chill in fridge for 4 hours.
Meanwhile chop fresh berries and mix with sugar or thaw frozen berries in fridge.
To serve..cut cake into 12 wedges and spoon berries on top
