Question So I bought some pumpkin..Now what..?

I went to Walgreens tonight and they had canned pumpkin on clearance.....32 a can. These are the regular sized cans not the big ones. Anyway they only had 6 but I bought them all.
SO now what do I do with them that will keep them healthy yet tasty?

Hi, go to http://www.cookinglight.com/cooking/ and type in "pumpkin" in the Kitchen Assistant section - left hand side of the page.
I love cooking light when I need good recipes.

I read in SUperfoods rx about mixing canned pumpkin with low fat yogurt. Would it be ok to mix it with low fat vanilla yogurt? Would it have a sweet enough taste that way?

I mix my pumpkin with yogurt quite often. Depends on how sweet you like your yogurt. I'll sometimes put a spoonful of honey in mine, or sometimes Splenda if I'm really cutting calories (not whole foods I know, but I'm not a purist either), plus some cinnamon or pumpkin pie spice if I have it.
