coconut butter on bread is simply delicious ... 120 kcals - so what?!

I use it as a substitute to butter, oil and olive oil in recipes. It's a little more expansive for me but I really don't like the taste of olive oil. It's my healthy fat of choice.
I make my own peanut butter with it, since the only one I can find here is made with bad fat. That's half water half coconut oil, a bit of sugar, a bag of peanuts and I have healthier, cheaper, great tasting and less caloric peanut butter. It's great for my low carb dinners.

I use it for curries, the coconut milk for the sauce and I spoon some of the oil from the top and cook the vegetables in that. High in calories isn't necessarily bad.

I've been using coconut oil for cooking and skin care products. I don't think I could eat it straight up though.
