mandalinn, mine varies a lot too. There isn't really a typical day, you're right. But generally, I cook as much as I can, I'm vegetarian, and I eat more fruits and veggies than anything else.
Mmmm, that tomatilla salsa looks great!!! I am def going to make it. What do you usually eat it on/with? (I'm not in maintenance but I peeked in and had to say something, hope you all don't mind)
No problem Nikki I put it on everything! I made black beans and rice and put it on that... I made enchiladas and put it on that... I even bought some chips (abnormal for me)- blue corn chips & stuck with the portion size of 10 chips. Oh, and I put it on salad! I make my own kind of "taco salad" - lettuce, tomatoes, peppers, whatever other veggies I have around (avocado!) and then black beans (you can use canned if you don't make your own, just drain and rinse them first) Cheese if you want (but I try to eat as many vegan meals as I can) Corn is good in it. Salsa is the "dressing"! Can be very low cal/healthy.
I just loved your visusals (do you want to come cook for me? ) and can relate. I always thought I ate healthy until I really started looking at what I ate.
Oh, and I drink a lot of caffeine still. I work, have a young child and it's the only way I stay awake. I just put some milk in it or drink it black so it barely adds any calories.
I'm sure I had plenty of "Full Page" days myself! What I find really nuts is that I would have SWORN up and down I did not overeat and that I ate pretty healthy and I was just fat because of bad genes or I was meant to be big or something. Was I ever delusional! I feel like I walked out of a fog and saw the truth. Calorie counting and my food scale put it all in perspective for me big time.
SO amazing that we can change our minds. I am grateful for that every single day Don't get me started on how much I love exercise now!
