It's not hard to count carbs and calories. I keep track of seven "nutrition data" metrics. Just multiply whatever system you're using now.
What has worked for me was dropping my carb intake to <120 g/day, then gradually moving it down by getting used to different foods (i.e. no more pasta) until now, where I average about 80 gross carbs (50 net). Atkins, on the other hand, recommends dropping your net carbs very low (<20) for a short period of time and then gradually shifting them up until you stop losing weight, then backing off slightly from there. Try doing a little research into different low-carb plans to get an idea of the levels.
