Default High Protein Baked Goods

Does anyone have a recipe for a higher protein muffin? DH is a diabetic and would like to have something like this for breakfast. The Greek yogurt I buy has alot of protein in it. Can I bake with that? Suggestions? I would really like to be able to bake him something that tastes good, that would be a treat for him, and has more protein. TIA

I've been playing around with biscotti recipes because they are usually made without added fats (I manage to get enough fats elsewhere in my life...). Mine run about 100 calories each. They are easy to make and keep for a week in the cookie jar. They aren't as sweet as a muffin but they lend themselves to whole wheat flour really well which is a bonus! But if he has his heart set on muffins these won't work at all....

This is the basic recipe I've been using (after trying a few):

my current batch has 1/3 cup hazelnuts (sliced thin and small), 1/3 cup dried apricots (diced up) , and 1/3 cup 70% dark chocolate chunks. You could increase the nuts for more protein. Because there's more eggs in this than a typical muffin recipe they already have some more protein. One biscotti has about 4 to 5 grams of protein.

Other substitutions - I've swapped in frangelico instead of the creme de cacao because a) i had it and b) it matched the hazelnuts. I've also done almonds (used almond extract) with craisens; that worked well. My attempts to add cocoa nibs have not been a success....

You can also make savory biscotti - I like parmesian and black pepper. Those tend to have some added oil though. But they are yummy. Here's a recipe for those:

Here are two muffin recipes I make - one sweet, one savory. They are my variations of recipes I found online, so the yield amounts are a bit odd.

Banana Nut Protein Muffins

1 cup flour (I use 1/2 white 1/2 wheat)
6 tablespoons protein powder (I use MLO Super High Protein Powder)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 large egg
2 tablespoons natural unsweetened applesauce
1/4 cup plain Greek yogurt
1 teaspoon vanilla extract
2 very ripe bananas, mashed (1 cup)
1/4 C. walnut pieces
2 teaspoons assorted baking spices (I use 1/2 tsp. Penzey’s baking spice, 1/2 tsp. cinnamon, 1/4 each of nutmeg, ginger, cloves, allspice)

Preheat oven to 350 degrees F. Line muffin tin with paper liners.

Stir flour, protein powder, baking soda, baking powder and salt together in a bowl; set aside.

Combine egg, applesauce, yogurt and vanilla and beat well in a medium mixing bowl. Beat in the bananas, walnuts, and spices.

Add flour mixture to banana mixture and stir just until mixed – batter will be thick. Fill 9 muffin cups nearly full. Bake for 20 minutes, or until a wooden pick inserted in center comes out clean.

These are NOT super sweet but I think they are very flavorful.

Calories 134.2
Total Fat 3.1 g
Total Carbohydrate 17.6 g
Protein 9.5 g

Ham & Swiss Breakfast Muffins

3/4 cup flour (I use 1/2 white 1/2 wheat)
1/4 cup steel cut oats
3 tablespoons protein powder (I use MLO Super High Protein Powder)
1/2 tablespoon baking powder
3 large eggs
2 tablespoons natural unsweetened applesauce
1/3 cup finely chopped ham
1/3 cup grated Swiss cheese
1 teaspoon Dijon mustard
1 tablespoon parsley
1 teaspoon tarragon
1/2 teaspoon Penzey’s Mural of Flavor spice blend
Fresh ground black pepper

Preheat oven to 350 degrees. Line muffin tin with paper liners.

Mix the flour, oats, protein powder, and baking powder; set aside.

In another bowl, beat together the eggs and applesauce. Stir in ham, cheese, mustard, and spice.

Fold the ham and cheese mixture into the flour mixture.

Divide the batter among 8 muffin cups, about three-fourths full. Bake for 20 minutes, or until a wooden pick inserted in center comes out clean.

Calories 134.9
Total Fat 3.9 g
Total Carbohydrate 14.5 g
Protein 9.9 g

Something yummy you can do with the banana muffin...slice it into about 4 slices, lay the slices on a baking sheet, and bake at 400 degrees for about 10 minutes. It gets all warm and crispy and it's kind of like banana toast.

And the ham and swiss recipe is very flexible. You can do different flavors of ham (or use bacon) or different flavors of cheese or use different spices. Some variations I've done:
maple ham + smoked cheddar + finely diced apple + cinnamon + basil
peppered bacon + hot pepper cheese + parsley + sage + thyme
smoked ham + blue cheese + rosemary
bacon + provolone + sun dried tomatoes + parsley + oregano + basil

The ham and swiss muffins are great for when I need something quick I can take with me to the office to zap in the microwave for breakfast. Two of those plus applesauce or yogurt and I have a perfect meal.
