For my mid-day meal I had a 50 calorie tortilla with 1/2 cup fat-free refried beans, 1/4 cup 2% shredded cheese, green onion, chopped, and some 0 calorie Taco Bell sauce. This was so yummy and only 210 calories!

I picked up some Marc Angelo Mediterranean kebobs today in the meat section. I was craving beef, so I got the sirloin beef ones to try, but they come in pork and chicken as well. Each beef kebob is 90 calories.

I've never tried it -- maybe with the granular Splenda??? Let us know if you try it.

I can't remember where I found this, but I'm going to try it soon:

Creamy Chicken Enchiladas
1/2 cup green onion, chopped
1 can (4.5 oz) chopped green chiles, drained
8 oz cream cheese, cut up and softened*
2 cooked, chopped chicken breasts
8 corn tortillas
1 can red enchilada sauce
1 cup Cheddar & Monterrey Jack cheese, grated (as desired)

Stir green chiles, chicken & cream cheese over medium heat. Stir constantly until cream cheese melts. Remove from heat. Stir in green onions.

Spoon approx 3-4 Tbsp chicken mixture down center of tortillas. Roll up tortillas and place seam side down in 13X9 baking dish sprayed with Pam. Repeat.
Pour enchilada sauce over enchiladas & top with as much cheese as desired. Bake in 350 oven for 35-45 minutes, until bubbly & cheese is lightly browned.

220 calories per enchilada -- you could even lighten this up by using low-fat cheeses

I just had a tortilla pizza: take 1 small whole wheat ff tortilla and top with one serving of turkey pepperoni, sprinkle on a 1/2 cup of sauteed red, orange and yellow bell peppers with sauteed red onion and add a few T of low fat shredded mozzarella cheese. I bake this directly on my pizza stone in a 450 degree oven for 7 minutes. They are fantastic! I make these ALL the time and just vary on the toppings. I sprinkle with garlic salt when they come out of the oven. YUM

Pigs in a Blanket

2 Hebrew Nat'l 97% fat-free hot dogs
2 - 50 calories each biscuits (the kind in the tube)
1 slice 2% cheese (optional)

Wrap biscuits around dogs and bake (use temperature on biscuit tube). Put half slice cheese on each dog right before done baking.

wheat thins tamato basil (15pcs)- 140 cals
1 wedgeLaughin cow cheese- 35cals




My favorite thing ever! Anywhere you would usually put mayo instead put laughing cow cheese it takes care of your mayo and cheese at 35 cals a wedge.

Not very fancy, but my go to snack when I'm craving salty is 10 saltine crackers and 2 wedges of laughing cow cheese for 190 calories. Yum.
I've always been a 'savory' snacker, and this helps me satisfy that craving.

Emergency lunch at work:

1 can of soup (M&S veg) + 1 small can of tuna = 200cal

This fills me for ages! Partly the protein, partly that blended soups take ages to digest. Try it. It's brilliant.
