Hey Chicks! I thought it might be great to start the daily menu thread again. I am POP again and I know that I could use some inspiration for daily menus. I think the newbies could benefit also. I'll go first
6 0z LF yogurt mixed with banana and whole almonds (6) = 3/4 D, 2 F, F
La lite- midmorn snack
Lunch:
1 whole wheat/flax Joseph's pita (these are darn good and seem to be good for you) with 1 0z LF cheddar, 1/2 sliced tomato sliced on top - 6 oz grilled chicken: 1 apple = 1/2 D (I always go over with my dairy- i love cheese too much), S, P and V, F
la lite- late afternoon snack (can't eat the bars after four pm or I turn into a sugar craving gremlin for the rest of the night)
Dinner
7 0z grilled or baked haddock (with lime juice and spray of olive oil), cukes marinated in red wine vinegar with mortin's lite salt, fresh garlic and pepper,
1/2 of 1/2 russet potato baked for about 45 minutes with spray of pam and onion powder (P, S and VVV ( i usually eat whole cuke)
Breakfast
2 oz. bagel (Alternative Bagel -110 cal./5g fiber for whole bagel)
1 T. RF cream cheese
1/2 c. grapes
(1S,1Fa,1Fr)
Mid-Morning
3/4 c. Blueberries
(1Fr)
Lunch
4 oz Boar's Head Low Sodium Deluxe Ham (7 slices - depends on how your deli slices it)
1 wedge Laughing Cow lite swiss cheese
(Take small pieces off cheese and spread on ham slices and wrap up)
3 c. lettuce w/15 sprays Balsamic Breeze Salad Spritzer
Medium Carrot cut into sticks
(1P,1/2D,2V,C)
Mid-Afternoon
LA Lite
Dinner
7 oz tilapia
1T horseradish sauce
1 oz. Kraft 2% Reduced Fat Parmesan
(Sprinkle tilapia w/Morton's Lite Salt, pepper, garlic powder and onion powder, cook over med-high heat in Pam. Before turning the fish, sprinkle top side with spices and spray the fish with Pam. This gets the fish nice and brown on both sides. When it is done, spread on horseradish and sprinkle with cheese. Sounds weird, I know, but I got this from a counselor at COD, and it is YUMMY)
1c baby portobello mushrooms, sliced
5 scallions, sliced
(pan fry in Pam with Mortons, pepper and garlic powder)
1/3 c brown rice
(I cook it a cup at a time and add a packet of low sodium chicken broth to the water for flavor)
Snack
LA Lite Chocolate Shake w/ 1/2 banana mixed in

Praz - just wanted to tell you in your husbands menu kit book in the back there are a couple pages with sample menu days also. When I first started that helped me a lot.
I missed out on the last couple of days of this, so I'm going to hop in today.
