I've got this stewing in the crockpot right now and just snuck a bite. It is honestly some of the best chili I've ever tasted! I can't wait to eat it tonight!
I used vegetarian mince instead of ground meat, used 1 red and 1 orange bell pepper, 2 onions and 3 cloves of garlic but other than that, followed the recipe. Except I didn't use any oil at all because I combined all the ingedients in the crockpot and have been cooking it on high for about an hour so far. I'll probably turn it on low after about another hour and let it simmer for a few more, until dinner time.
LindaT is definitely right - if I had some extra spinach, I'd throw that into the mix, too. Chickpeas would also be really nice.
