My Meals with FlexPoints

  • I love to read cookbooks, but never seem to have time to cook. So, one night, I sat down and planned simple (perhaps boring ) meals that I could make repeatedly, and I thought it might be helpful to share some of my favorite meals with you guys:

    BREAKFAST

    1 egg
    2 pieces light bread
    1 slice cheese

    1 c oatmeal
    1 c berries
    1 c milk
    1 c coffee

    1 c. oatmeal
    2 T peanut butter
    1 c milk
    1 c coffee

    4 small krusteaz pancakes (following recipe)
    1 T maple syrup
    1 c milk
    1 c coffee

    Usually it is enough just to heat the milk to pour into the coffee, though I've heard heating it, then whizzing it in the blender, will produce results slightly similar to a real cafe latte.

    LUNCH & DINNER

    1 package ramen (lunch on the go)
    green tea

    1 small skinless chicken breast
    1 c ff cottage cheese
    1 serv creamy ff dressing
    salad greens, 1/2 tomato
    ------

    I've figured my points based on the at-home guidebook and my points calculator, but I'm sure estimates may vary.

    I like to buy spice blends (like the Rosemary Garlic Blend from Sam's) and use them to flavor the chicken breasts. Usually a spritz of lemon will do for the vegs.

    One indulgence I like is asparagus roasted in a small amount of olive oil with fresh pepper, sea salt, and lemon.
