low sodium-0 point salsa

  • Hey all, I saw this at http://www.lowsodiumcooking.com/free/Salsa.htm.
    I did the math and a serving is 2 tablespoons.

    3 lb Plum Tomatoes,Peeled And Chopped
    1/2 c Black Beans,Cooked
    1/2 c Frozen Corn
    1 cn No Salt Added Tomato Sauce
    1 Chili Pepper
    1/4 c Red Wine Vinegar
    1/2 c Onion,Chopped
    1 t Minced Garlic
    1 1/2 t Cilantro
    1/2 t Oregano
    1 1/2 t Cumin



    Combine all ingredients in a large pot. Simmer until desired thickness, about 15 minutes. pack into jars and store in refrigerator. Makes about 3 pints.

    Yield: 48 Servings

  • The thing is if you eat it all (I love salsa and use it a lot) this would have points because of the beans and corn...but it does sound delish.
  • Just bear in mind if you are using canned black beans, drain and rinse them to get rid of the sodium they pack in the can.

    Sounds yum.. I make my own salsa with tomatoes, jalapeno, and red onion w/ some fresh cilantro, but I'm definitely gonna try the one you mentioned minus the tomato sauce. (I like mine chunky) I always have black beans and corn hangin around.
