low sodium-0 point salsa
Hey all, I saw this at http://www.lowsodiumcooking.com/free/Salsa.htm.
I did the math and a serving is 2 tablespoons. 3 lb Plum Tomatoes,Peeled And Chopped 1/2 c Black Beans,Cooked 1/2 c Frozen Corn 1 cn No Salt Added Tomato Sauce 1 Chili Pepper 1/4 c Red Wine Vinegar 1/2 c Onion,Chopped 1 t Minced Garlic 1 1/2 t Cilantro 1/2 t Oregano 1 1/2 t Cumin Combine all ingredients in a large pot. Simmer until desired thickness, about 15 minutes. pack into jars and store in refrigerator. Makes about 3 pints. The thing is if you eat it all (I love salsa and use it a lot) this would have points because of the beans and corn...but it does sound delish.

Just bear in mind if you are using canned black beans, drain and rinse them to get rid of the sodium they pack in the can. :)
Sounds yum.. I make my own salsa with tomatoes, jalapeno, and red onion w/ some fresh cilantro, but I'm definitely gonna try the one you mentioned minus the tomato sauce. (I like mine chunky) I always have black beans and corn hangin around. :) thanks for the recipe! |
you bet! I love salsa, but there's a ton of salt in most grocery store brands.
