Dinner Menu
1. Grilled chicken breasts/legs/thighs (let people pull their own skins off if they want to) and a marinade of your choosing, or a bbq sauce...
2. Cold poached salmon w/ dilled herb yogurt dressing
3. Salad w/ big veggie chunks (rather than potato or macaroni salad) use whole cherry tomatoes, broccoli florets, red onion rings, and sugar snap peas or chinese pea pods w/ balsamic vinegar
4. If you need a carb, make a rice salad (mayo free) w/ peas, or chopped red peppers (pimientos) mushrooms, and maybe scallions or onions.
Dessert: Fresh fruits, and that crazy angel cake we all love, or no pudge brownies....
