Seems like when I make this soup and have 2 cups at a meal I gain weight I do not understand the points value. 1 quart fat free beef broth , 2 large cans rotel tomatoes, pack dry taco seasoning, half head of cabbage and medium onion. How many points would you count this? I have calculated and been counting 1. Thanks in advance.
My estimate is about 11 for the ENTIRE recipe. I don't know how many cups you get out of a recipe. That's assuming a half head of cabbage is about 4 cups and 14.5 oz cans tomatoes. Just divide the 11 by how many servings you get from the whole recipe.
The problem may be the sodium instead of the points. Sodium increases water retention - more so in some folks than in other. Consider using lower sodium broth, tomatoes and taco seasoning and see if that helps. Broths and seasonings tend to be high in sodium.
I have a feeling it's the salt that is making you see an increase on the scale too. Taco seasoning alone has 430+mg of salt per serving and rotel tomatoes have 520 per serving...that's not including the salt in the broth.
