  • Vegetable Curry
    serves 4
    0 points per serving (so you can eat it all!).

    Ingredients:
    spray oil
    onion, sliced
    2 cloves garlic, crushed
    2.5 cm ginger, grated
    red chilli, de-seeded and chopped
    teaspoon of turmeric
    large can of chopped tomatoes
    225g of fresh or frozen french or runner beans cut into 1 cm pieces
    250 ml of stock made with a vegetable stock cube
    2 fresh tomatoes, cut into wedges
    salt and pepper to season

    How to do it:
    Spray large non-stick frying pan with the spray oil and cook the onion, garlic, ginger and the chilli for 4-5 mins, stirring occasionally.
    Stir in the turmeric and fry for further 1-2 mins. Add the chopped tomatoes, the beans and the stock. Bring to the boil and simmer for 20 mins until the beans are tender.
    Add the tomato wedges and simmer for 3-4 mins more. Season with salt and pepper.

    eh voila! hope that made sense. if you serve it with rice then don't forget to add the points...

  • Kirsty, this sounds good...but I have a question for you. What kind of beans are "french or runner" beans? We have beans that are French cut but that is all I can think of. Maybe you could clarify of that point. Thank you so much for posting this.

  • trish, i think any kind of runner beans or french beans will do. thin green things, about 4-6 inches long... lolly - any help with explaining beans!!? i guess you guys must call them by a different name....

    Kirsty, thank you for the picture. It looks like what we call Green Beans. Oh, we Americans are so creative. Anyway, I think that now I will have hubby convert it over to US measuring system and it is yummy curry veggies for dinner tonight!

    Thank you for the info and if I have any great recipe ideas I will post them.

    i reckon that chopping green beans into 1cm pieces is near impossible though... i tend to chop them into small pieces, prob nearer a half-inch long...
    if you like your curry strong then add more chilli!

    Beef lettuce wraps (I think this came from the old "Simply the Best" cookbook).

    Ing:
    1 Lb. lean sirloin (I've made it with 1/2 Lb. and it works too)
    4 cups of cooked angel hair pasta or rice noodles (cellophane noodles)
    1 Tbsp Honey
    1 Tbsp Soy Sauce
    1 Tbsp. Balsalmic Vinegar
    Red Pepper flakes
    2 t olive oil or Sesame oil
    Salt and pepper to taste
    Leafy lettuce leaves

    Instructions:
    -Slice the beef into very thin strips and salt and pepper to taste (you can add tenderizer if needed before).
    -Heat the oil in a non stick skillet.
    -Saute the beef until it is browned.
    -Add the Honey, Soy Sauce, Balsalmic, and red pepper flakes. Stir.
    -Add the cooked noodles and mix well.
    -Remove from the heat.
    -lay the leaves on each plate and put the mixture on top.
    -roll them up an eat like tacos

    This serves 4 and is very quick and easy.
    I count this as 8 pts., but I'm not entirely sure.
