I am an oatmeal freak too. I love it with peacans or fruit too.
For the weekend, i like to do a little something special while still staying healthy, so this weekend i am making a quiche. Egg substitute, light cheese, light milk, bacon that is precooked (not much fat on it at all if you buy the precooked kind), and canadian bacon with some veggies diced in...i feel like iam being SO indulgent and really it is very healthy along side a piece of fruit or bran muffin. YUM.
I alternate between oatmeal with sweet'n low (I make mine extra thick) and milk- 3 points

Skinnier version of an Egg McMuffin: Light 'n Healthy english muffin toasted, topped with a 1-egg omelet folded in quarters, 1/2 slice lite american cheese, 2 slices of Hillshire Farms Deli Select ham. 4 points
1 or 2 eggs or the equivalent in egg substitute

place in a ziplock bag (now I use freezer bags) and squeeze out air. Zip close the bags.
Boil water (which I do while I am showering), drop in ziplock bags and boil for 13 minute (which I do while I get ready - dry hair, dress, put on make up).
Roll omelet out onto plate and eat.
**The ziplock company does not recommend it because the bags can burst but I have never had a bag burst the key is to have the pot large enough to contain the bag*** ***there is no plastic scare that would be involved***
Some say it takes less time to just make one but I get up early enough as it is to wait until I got completely done in the shower and ready to go I could make it just nto have enough time to eat it.
Morrigan - I may have to try some of the oat bran - I bought some from the amish store in Indiana and I thought I could use it for bran muffins but the I haven't found a low point recipe yet for it.
My breakfast is 2 big batch muffins - 2 pts and a banana or yogurt. I'm out of the big batch muffins right now. Somehow I'm going to have to find the time to make another batch this weekend. These are a staple along with the veggie soup
3/4 cup of Total cereal and 1/2 cup skim milk 2 pts
1 cup fruity pebbles and 1/2 cup skim milk 2 pts
fat free blueberry muffin 2 pts
quaker breakfast cookie 3 pts
1 egg and 1 slice turkey bacon and 3/4 cup obrien potatoes 4 pts
Kelly - that sounds awesome! I'm going to have to try that! I'd much rather have my breakfast cooking while I'm getting ready instead of having to stand there cooking it when I'm in a rush in the mornings!
I like my 5-minute 'Egg McMuffin', but I usually only fix it once a week, as cereal and oatmeal is still quicker.
5-minute Egg McMuffin Instructions
1. Throw frying pan on gas burner, heat to medium.
2. Grab ingredients from fridge and lay out on counter -- a measure quarter-cup of Egg Beaters, slice of 2% cheese, MorningStar frozen breakfast patty, Promise spread, and an English muffin (or 2 slices of bread).
3. Run around prepping like a maniac for 30 seconds. Grab utensils (knife, spatula), spray olive oil spray on pan, stick patty in microwave, stick muffin/bread in toaster and start toasting.
4. Step on cat, who is always underfoot at this manic stage!
5. Pour egg beaters in pan. Start cooking breakfast patty in microwave.
6. Spread a bit of Promise on now-toasted bread, put on plate.
7. Step on cat again. Optionally, swear at cat.
8. Flip breakfast patty, cook a few more seconds.
9. Unwrap cheese. Throw Promise spread back in fridge.
10. Egg beaters are done! Turn off burner, put on bread, top with cheese slice to melt. Optionally, throw away cheese wrapper, or else leave on counter in haste.
11. Throw breakfast patty on sandwich. Slice in half.
12. Step on cat again.
13. Serve!
I've actually gotten this under 5 minutes, but haven't timed for my record yet...
Current favorite is Cinnamon toast. 2 slices of bread -1 pt. spray with ICBNB spray, sprinkle cinnamon add 1 1/2 tsp. sugar to the tops (this is for both pcs not 1 1/2 per slice), spray top of this with the butter spray and toast. 2pts and it's good for the sweet tooth.
