Pineapple Angel Food Cake Pan
If you bake your pineapple angel food cake an in a tube pan, I don't recommend turning the pan upside down to cool. And don't hang it on a bottle to cool. I did the bottle cooling like always and when I returned to the kitchen I had cake all over the counter. The pineapple was too heavy. The sides were nicely stick to the pan. What a mess. It is much better to use a 9 x 13 pan. It may work for some, but don't say I didn't warn ya.

Pineapple Angel Food Cake
Hmmmmm. I do it in a tube pan exclusively and never have that problem. It might be because I incorporate the pineapple SEPARATELY ( I first use the liquid, and beat the batter, THEN fold in the pineapple to make it a homogenous mixture. This works every time. I used to be a pastry chef... try it. It's never been a problem. ) :-D

That's usually a sign that you didn't bake it long enough. I've never ever had that problem at all..... ;)

brown and cracked
Another key to a successful angel cake is that the top should be well browned and cracked.... it should pull away from the sides of the pan before you remove it from the oven.
