here's a trick i have always found effective:
pick a candy or go buy a (small!) box of chocolates or a bar or whatever.
THAT is your candy. the next candy you eat will be THAT candy. you can't have any other candy until you've eaten that piece. you can have that candy any time you want - the only thing is to pick the exact right time.
i've gone literally weeks without eating candy because now it's just the one piece i can have any time i want - i just don't want it right now. i know it's there, it's not going anywhere, so i find i'm not so anxious to shkoff it back.
