JenB77 10-29-2010 01:25 AM

Well today I had to go to a burger and milkshake fundraiser eek! I did ok with it, just a few sips of the milkshake, burger with no mayo or anything but lettece and salad instead of fries :)

sweetsmmr91 10-29-2010 01:27 AM

Vegetarian hot dog, mustard, 45 calorie mustard, and 4 oz of steamed green beans with I can't believe it's not butter spray!

Not the best, but Metabolic Research Center is kind of strict and I'm vegetarian :)

You definitely could have done much worse!

I have some really awesome spicey mustard that has like 10 calories in it. I may try it on some salad today...it might just work and help me cut out some of the salad dressing points I use.

Think I'm probably going to do breakfast for dinner! I'm pretty sick right now so I need something easy to throw together like a veggie egg white omlet and an Arnold Thin with cream cheese.

JenB77 10-30-2010 12:45 PM

Tonight on the menu is steamed prawns, tossed in with sauteed peppers, onions and garlic over a bed of brown rice YUM

BigDaddy 10-30-2010 01:13 PM

Quizno's chili dumped over a side salad instead of dressing and a small mesquite chicken sandwich. 13 points of yum.

nicoledg 10-30-2010 04:28 PM

Im having a quicky dinner lol 1/2 of sausage and cheese multigrain thin crust pizza, 12 points, totally worth it lol I also have 7 points left after that, just in case...going over to a friends place tonight, not sure what she'll have there lol

anyone want to keep this thread going with our dinner choices? it's interesting to see what we are eating. :)
tonight we had 2 fried eggs (fried in pam spray), and one serving of jemima pancakes (the BEST pancakes in my opinion, the off brands don't compare). it amounted to 2 very decent sized pancakes topped with 1/4 c light syrup. it was filling, satisfied a sweet tooth, because we normally do a meat dish for dinner.

I love spicy mustard with pretzels. 15 pretzels and 1tbs mustard. yum!
i wanted to tell you, i do my salads with 2 tsp olive oil and a tbs of balsalmic vinegar. it is so good and when i lived in italy it was the *IT* dressing, what everyone used. I also just use a salad mix with some cut up cucumbers and 1/2a tomato.

Lauren201 11-11-2010 10:01 PM

I'm making parmesan chicken, steamed broccoli and instant mashed potatoes.

JenB77 11-12-2010 02:21 AM

Tonight I made a big dinner, not my usual lol

Roasted chicken
califlower
brussel sprouts
stuffing
potatoes
gravy

I went super light on the potatoes, gravy and stuffing..it was hard!!

mmel3283 11-12-2010 12:07 PM

Last night we did Turkey Bacon BLTs...they were awesome.

Jelma 11-12-2010 01:58 PM

I love this thread!

Last night we had chicken thighs roasted with parsnips, celery, ginger and onion. It was a recipe from my new cookbook - Simply Ming one-pot meals. I went to Ming Tsai's (Simply Ming on PBS, the Next Iron Chef) book signing last Friday, it was a great time and his book is fabulous though I cut back a bit on the oil and probably will have to for alot of the other recipes.

i had curry tonight with pork and jasmine rice-it was fantastic! my husband made it sans recipe for the first time and it really was awesome. only thing is 1/2 c. rice (which makes a bit under a cup i'd say) is 6 points! that's awful. but we went light on the coconut milk (couldn't find the 'light' kind here).

Jelma 11-15-2010 09:41 AM

Is jasmine rice that high? I always count one cup cooked as 4 points.

It might be what's added to the rice. She mentioned coconut milk.

Good point. I do remember when I started WW online most of their point calculations for rice seemed really high and I think they had it as uncooked, I was so worried at first, I love rice!

I love the recipie I have for chicken fried rice in my WW cook book.

Last night I didn't feel much like cooking, I had frozen vegetable lasanga, a slice of texas toast and a greek salad with olive oil and balsamic vinegar - total points 14.

mmel3283 11-16-2010 11:48 AM

I made a chicken taco rice last night. I wanted something mexican but not all the fat.

I used white rice instead of brown...the brown is OK...but for something like this I wanted white rice. I had left over peas and corn and grilled chicken. I mixed those together with taco seasoning, some 2% milk mexican cheese and and topped it with a little bit of low fat sour cream. It was really good. Probably about 8pts per serving.

the jasmine rice i use is 1/4 cup uncooked=3 points
i thought it doubled in size after cooking, so that would make 1/2 a cup and i wanted 1 cup cooked so i counted 2 servings for 6 pts total. looking into it just now i found that 1/4c uncooked is equal to 3/4 cup cooked. :dizzy: but i always measure out my 1cup loose rice in a measuring cup so i am actually under pts a bit. confusing sometimes!

jess jp 11-16-2010 09:46 PM

dinner tonight was chicken soup. i baked 3 chicken drumsticks for me in the oven (hubby wanted his boiled in the soup) and took the skin off and pulled the pieces off the bone. added 2 medium potatoes for me, celery, carrots and chicken broth. my husband made his own hot sauce too which was super good. hoping i weigh 178 ish tomorrow...i was 179.0 today. :)

veggiemama 11-16-2010 10:59 PM

Small vegan burrito on tomato tortilla for me tonight. (black beans, spanish rice, guac, pico, and lettuce)
Yummy in my tummy. :)

Yes it is! I estimated my points last night for dinner - I'd say 10ish. We had Pot Roast with fermented black beans and carrots and smashed potatoes (nothing added to them at all, still delish). It was another recipe from Ming Tsai's cookbook, I'm obsessed. :D

Jelma 11-19-2010 11:35 AM

Last night I poached chicken breasts, (for the first time!) shredded them and make a quesadilla with chicken, refried beans and cheese. I served it with gucamole, sour cream and rooster sauce (Sriracha). Total points 10.5.

jess jp 11-19-2010 12:18 PM

jelma what's a poached chicken breast?
last night we had what we call pork chop bake. you take 4 medium yellow potatoes (this is for 2 servings. hubby is also on ww) wash them and cut them however you like. boil them until soft. put 4 2oz boneless pork chops into casserole dish, when potatoes are done add on top of pork chops, then over top pour this mixture in-
1 cup mushroom soup-make sure it's low fat. the one i used yesterday was 2grams but have seen some with 10grams per serving! one packet of onion soup mix and 2-3 tbs of water-just mix it all together.
shred some cheddar cheese on top-just an oz or so. it's really really good. and cheap too!
cook on 350 degrees for 15-17 minutes-you're just cooking the pork.

Poaching is just a way of cooking chicken, it is like boiling. I put 3 chicken breast in a large frying pan with deep straight sides, covered completely with water and brought to a boil. I then lowered the heat to a simmer for about 3 minutes and then turned off heat, covered, and let sit in the water for about 20 mintues. I think next time it needs to simmer longer, I was a little paranoid about it not being cooked all the way so I let it sit for awhile longer than 20 minutes, maybe 30 or 35. Then you just shred it. 3 chicken breasts makes alot of shredded chicken!

Tonight was pretty hectic! I was working the Trauma Unit in the ER and was on my feet all day. I managed to have some Kashi Cereal, carton of Skim Milk, and a yogurt.

JenB77 11-20-2010 12:43 AM

Subway, was out shopping with my youngest, 6inch turkey on brown, no cheese, lots of veggies and low fat mayo. 5 points :)

gerly1 11-20-2010 05:47 PM

Tonight we had a nice beef roast, yukon potatoes, and baby carrots.

JenB77 11-20-2010 09:11 PM

home made chili, used ground turkey and it was mighty fine!

Xan 11-21-2010 02:36 PM

Garlic pork tenderloin, mashed butternut squash, steamed spinach. The pork is baking now, and smells heavenly.
