Default Low Point Snack Ideas

I posted this on a free web site a couple years ago, and it's since disappeared (I think; maybe it's out there somewhere else now). This isn't my list of snacks -- though I've since added a few of my own -- and I'm not sure where it came from. Also, the point values may be slightly different since the list is from 2 years ago. Please tell if the points have changed so I can edit the list! I did fix the serving side on the large breadstick, but I don't really follow WW plan anymore so I'm certainly behind on the changes...

Cucumber and Onion slices in vinegar (Use part water)
Cucumber Salad (Slice 2 cuc. And onion (1/2) and marinate in mixture of 1/4 cup cider vinegar and 1/2 cup water, and 2 packets of Equal. Variations, add dill, garlic, or tomatoes.)
Fat Free Jello with Fat Free Coolwhip
Dressing/Dips, Walden Farms
Grilled Zucchini (Slice lengthwise, sprinkle with garlic powder on cut sides, and grill about 5 minutes on each side, back side first.)
Hearts of Palm
Marinated Veggies (Cukes, greenbeans, carrots, whatever, marinated in italian dressing, put in zip lock bag and shake.)

Tomato/Artichoke Dip

1-28 oz can of Hunt's select diced tomatoes with italian seasoning
1 can of artichokes (in water)
fresh garlic
fresh lemon juice
salt and pepper
french bread baguette

Drain the tomatoes, put in a bowl. Drain the artichokes and do a rough chop - put in with tomatoes. Add garlic, lemon juice, salt and pepper to taste. Mix well and let sit in fridge for a few hours. Slice the baguette a bit 1/2 in thick. Spray both sides with butter spray and broil or bake turning until both sides are golden Top with mixture. You can have 3 for 1 pt. Yummy

Mock Apple Crisp

4 oz granny smith apple
1 TBSP water,
1 package sweetner

slice apple and microwave all until apple is tender. Top with lowfat granola and optional (whipped topping) - 3-4 points depending on amount and type of granola.

Tomatoes and Squash

2-14.5 oz cans Stewed Tomatoes, flavored with Basil and Oregano
2 medium yellow squash, sliced

Cook over medium heat until squash is tender. For a little color you can subs. 1 yellow squash for 1 medium zucchini. Serves six at less than one point (actuallly, I see this as no points!)

Taco Soup

Brown, 1 lb lean ground beef and one onion.
Add - Don't drain!

3 cans chili beans
1 can tomato sauce
1 can chopped green chiles
1 packet taco seasoning
1 can corn
1 can chopped tomatoes
1 cup water
1 packet ranch dressing

Bring to a boil and simmer 15-20 minutes.

Kashi Friendly Fiber Muffins

Makes 12 muffins
Preheat oven to 400

1 cup whole wheat flour
2 t Baking powder
1/2 t salt
1 3/4 cup kashi good friends cereal
3/4 cup skim milk, rice, or soy
1/4 cup honey
2 egg whites
1/4 cup unsweetened applesauce
1 medium ripe banana, mashed
non stick cooking spray

In a small bowl, stir together flour, baking powder, and salt. Set aside. In a larger mixing bowl, combine Kashi Cereal and milk and let stand for 2-3 minutes. Add the egg whites and beat well. Stir in applesauce, banana, and honey. Add flour mixture and mix only until dry ingredients are moistened (over mixing will produce rubbery muffins.

Fill sprayed muffin tins. Bake 20-25 min or until lightly browned. 1 point per muffin
