Default Thin4Life - Week of Sep 10/07

Good morning, everyone. It was a little cooler this morning--only 75! It will still be hot today, but not in the 90's.

Had a good weekend. Played golf. Went for a long walk with a friend I'm trying to get into walking. Saw the play, Vagina Monologues, and it was very good.

Eating-wise, I did pretty good. WI is tonight and I hope for the big M (maintain).

How is everyone else?

Good morning! I worked on Saturday (OT) and then went for a jog (only 1.75 miles, but it was still good). Sunday I hung out at home - slept late, did some grocery shopping and made TONS of food (slow cooker Jerk Turkey Soup (for the week), Cheddar Cheese Soup (for lunch), salads (for dinner!), and Apple Chunk Bread (for dessert)). So I have lots of leftovers. I made extra salad too so I wouldn't have to chop anything for today or tomorrow. I brought the Jerk Turkey Soup and salad today for lunch. I have leftover homemade pizza from Saturday for dinner tonight. Yum!

Back to the grind today. I would have liked another day to rest, but hey at least I got OT for Saturday. I'm coming in again this Saturday and the one after and THANKFULLY no more after that. I've been working 6 days a week for most of the summer. I SO need some extra time off. Vermont was nice, but I could have used at least a week of it. We are taking vacation for the last week of September and going to Oregon to see my doctor out there and making a vacation trip out of it. I'm really looking forward to just having a week off of work!

Good morning!

It's still humid here and a break is in the forecast. We came close to breaking another record on Friday with the temps in the 90's. Friday was pretty crazy with doctor appt, banquet, and DS #2's football game. I ended up having to pick up my mom from the airport because her flight had been canceled to Chicago. Crazy!

Anyway, Saturday I did some errands and I finished a little early so while I waiting for DS #2 to get done with practice I pulled on my walking sneakers and walked for a little over 25 minutes so I got some activity in. Headed to the mall and found a great wallet for a steal ($4)! Sunday it rained all day so I stayed inside and did some cooking. I cooked a turkey breast and made extra so I'd be set for lunch and also made Sassy Meatloaf for tonight.

Lori: Saturday must've been the night for homemade pizza. We made it too! I love making it from scratch--DS #2 grated the cheese while I made the dough. I made extra and stuck it in the freezer. I'm counting down the days to our vacation in October. I just hope the weather cooperates for us.

[Lisa:[/b] Sending you good vibes for your WI this evening. I did not have a good day of eating yesterday and TOM is due at the end of the week (or earlier) so it's hard to say how my WI will go. I'm really hoping to get another small loss but we'll see. I figure if I'm careful today and tomorrow and drink lots of water to flush out the salt I consumed I should be okay.

Susan How is everything with you? Are you still running?

Pam: Hope all is well with you!

All right, you two: I want the recipe for Cheddar Cheese Soup (Lori) and Sassy Meatloaf (Melissa). Please?

Received more bad news about DH. He had another cancer spot on his arm, so he has in-office next Tuesday. I don't know much more than that as he did not get details (Men!)

Melissa, thanks for the good vibes; I hope they work. I'll be happy to maintain as I said. DH maintained at his WI today, so he was happy.

Wow you guys are getting lots of heat lately! Not us. I think the temps have been normal. Maybe a little warmer than usual, but nothing over the 80's lately.

Sassy Meatloaf (from Simply the Best, WW)

Makes 6 servings/4 POINTS

1# lean ground beef
1 1/4 cup low sodium salsa
3/4 cup oatmeal
1/2 cup coarsely chopped mushrooms
1 carrot, grated
2 plum tomatoes, diced

Mix above ingredients together. Shape into 1 loaf or 6 mini loaves (which is what I do so that I can cook what I need). I weigh mine to make sure they're all the same.

Lisa: I hope the spot on DH's arm is easily taken care of.

Melissa, thanks for the recipe. It looks yummy. Bake at 350?? for an hour or so?

DH's arm will require minor surgery--it's a basal cell cancer which if you have to have skin cancer, that's the least dangerous.

Lisa: That's good news on your DH. Yes, bake at 350 for about an hour. I've never timed it but that sounds about right. Yesterday I had DH put the small ones in frozen and we baked them for about 1 1/2 hours at 325. The recipe is so simple and it tastes good.

It's still raining here--another dreary day. Tomorrow's high is 65! Cooler temps are slowly making their way into our area. I was out in the county yesterday and the smell of the grape vineyards was dominant--it brought back a lot of memories of football games!

My appt with my dr on Friday went well. The biopsy shows no precancerous cells which is really good. She did say that I'm experiencing perimenopause and that they were unable to tell where I was in my cycle because I'm all over the place...no kidding! Anyway, instead of trying to do a D&C she suggested doing a partial hysterectomy. She said the D&C would only be a bandaid for my problems and wouldn't help with the cramps/nausea that I've been experiencing. I value her opinion. She gave me some reading material and I just need to call and let her know what I want to do. I'm seriously considering going for it--I'm tired of the 2x a month TOM and the symptoms that come with it.

Nothing else major going on here--just plugging along.

Cheddar Cheese Soup:
Points per serving: 4
Servings: 4

Ingredients
2 tsp olive oil
1/2 cup onion(s), yellow, chopped
3 Tbsp all-purpose flour
2 cup fat-free chicken broth
1 1/2 cup fat-free skim milk
7 oz low-fat cheddar or colby cheese, about 1 3/4 cups
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste
1 tsp paprika

Instructions
Heat oil in a large saucepan over medium-high heat; add onion and cook until soft, about 2 minutes. Add flour and stir to coat. Add chicken broth; bring to a boil, stirring frequently. Reduce heat to medium and simmer until soup thickens, about 1 to 2 minutes. Add milk and return to a boil, stirring constantly.


Working in batches, puree soup in a blender until smooth; return puree to pan and reheat soup to boiling. Remove pan from heat and whisk in cheese; stir until melted (if cheese does not completely melt, cook over low heat for 1 minute, stirring constantly, until melted); season to taste with salt and pepper.


Ladle 1 1/4 cups of soup into each of 4 bowls and sprinkle each with 1/4 teaspoon of paprika.

Lisa - Good luck with your DH and the next procedure. I hope everything goes well! I don't know why I didn't think of just copying and pasting the recipe before. Hope I'm not violating anything by doing that...

Melissa - Good to hear that nothing is precancerous! Good luck with your decision. Does the doc think that the D&C won't help at all? And does the partial hysterectomy have any more risks associated with it? A co-worker's wife had a full hysterectomy and I just remember that he had to take a bunch of time off to help her, since she couldn't drive or anything like that for a while.

It was dark and dreary here yesterday. Today is the same, except that it is POURING out right now! Guess I won't be jogging My mood REALLY hinges on the weather (I was actually diagnosed with seasonal depression quite a few years ago) and days like this are horrible for me. I'm tired and moody and I don't want to do anything. On nice days when the sun is out, I feel energized and usually get tons of stuff done. Hopefully it will be nice out tomorrow.

My weight has been up the past few days by about a pound and a half. I have no clue why. I'm hoping it is just one of those fluctuation things.

Lori, DH was reading your post and says "run in the rain!" He's a running fanatic, so take it with a grain of salt. Thanks for the soup recipe. Sorry about your weather. If you like sunshine, move where I live--Florida.

Melissa, Good that it's not precancerous. A partial hysterectomy may be good. I'm not that familiar with it. Does that mean that you keep your ovaries? If so, then you won't be thrust into immediate menopause. Your weather sounds so refreshing.

WI yesterday was what I wanted--M (maintain).

Lisa - Because of my asthma, it is extremely hard to jog in the rain! The humidity just closes my lungs right up (one reason I would never move to FL ) I really would jog otherwise! Congrats on the maintenance!

Good morning! It's cool here this morning--only 58! There's a good breeze blowing so it feels cooler. It feels more like fall weather rather than the end of summer. It's perfect though for walking!

Last night when I went to get DS #2 from football practice I wore my sneakers because I knew I would get there early so I took advantage of it and walked for 20 minutes. It felt good! I'll probably do the same tonight since I won't be able to get out over the lunch hour because I have my WW meeting.

Lisa/Lori: The good part about this procedure is that I would keep my ovaries so I wouldn't be thrust into menopause. I read the pamphlet and from what I can tell there's not much risk. The recovery is about 4-6 weeks. I wouldn't be able to drive for the first two. I did ask if I would be able to continue walking and she said I could--just no strenuos exercise (which I'm not into!) so that wouldn't be a problem.

[b]Lisa:[/g] Congrats on the big "M"! I'm hoping for the same thing this week--especially since TOM is due anytime now.

Lori: We get our share of heat/humidity but nowhere near the scope that FL encounters; although our winters can be rough if we get the lake effect storms. We've been pretty lucky--I live along the lakeshore so we usually get missed unless the front stalls.

Where are Susan, Pam, Lala

Went to two doctor's appointments--I sound like an old lady. The first was to the dermatologist for a little sore on my eyelid. He said it's a small cyst and he gave me some medication and the dreaded antibiotics (lots of yogurt for me). I'm glad it wasn't precancerous. My awareness is heightened because of DH's situation, of course. Then I had a stroke screening. Have you heard of this? It was a pretty test. They checked my abdomen for aneurysms, my carotid arteries and the arteries at my ankles (for PAD). The technician said I'm fine. She was glad I came in as my mother has had an abdominal aneurysm repaired.

Went to a Mary Kay consultant's house last night for a makeover. We're entering a contest with before/after photos. It was fun.

Yes, Melissa, where are Pam, Susan, and lala?

I have felt horrible the past few days. Sunday, the scale said 161. Monday it was 162.4 and today it is 164 But, I've also been sick this week. I stayed home from work yesterday. I needed it too, the rest helped. Now just to get that darn scale back in its rightful place...
