that eggplant spread - nan - OMG!!! i'm adding that to my must-try list.
and kier - YES, you can use zucchini- but cut them lenghtwise unless you're using those cute ROUND zukes i've been seeing. and be sure to salt them as well - they hold a lot of water.

I'm going to try this might slide some Ground meat in between my Zuch Layers. I love 1 dish dinners. Or if I can get the Round Squash at our farmers market Maybe Turkey Burgers?
And not too much cheese which I can be quite guilty of!
Kier - do you go to the Madison market? i think Race farm is there - and they have the round zukes. I've also seen them in pompton lakes, boonton, lafayette village
and ground beef would work great - let us know how it works for you.

mmm scones!
I have recipes for irish scones and queen cakes. . .I havent made them yet!
Couldn't get to the Farmers Market yesterday and the S&S Zuch looked a bit suspect! so the recipe will have to wait.
Jiff if you're ever up in this area on a weekend we could go for a quick brunch at this cute lil english coffee shop with great coffee awesome quiche and "cough" pastry. It's very Proper in there!
Could we start a recipe sticky?
