Default my new electric smoker is awesome!

We bought a new electric smoker this weekend and I just made the best smoked chicken I've ever had. It was smoky and moist! We also did ribs and a pork roast which were great but I'm a chicken freak. It's so easy it's silly. All the details are on my blog if you want to know more, the address is in my signature.

Default Let the smoking begin!

A couple of years ago, I bought a little electric smoker called ANUKA from HSN. Since there are only the two of us it is just the right size. My bro says it is not a true smoker because it smokes and cooks at the same time. We love it. I smoked almonds at the beginning of the summer and they were really good. I smoke chicken, fish, pork ribs, and sausage and finish it up on the grill. My DH loves to some hot dogs an finish them on the grill. Salmon was really good. There is a rack so that you can do quite a bit for as small as it is. My bro has a monster smoker and will do a whole turkey in his, but what the heck would I do with a whole turkey. We use the smoker in the winter in the garage and drive the neighbors crazy. I prefer the apple wood. Nothing dries out; stays moist.

I hadn't thought about smoking almonds, cool! We kind of hesitated because there's only two of us but I like to cook ahead and have things in the freezer. From the three things we cooked I had the chicken which I've been nibbling on, a rack of ribs that DH had for dinner that night, and a pork roast. We had pork sandwiches the next night and I put the rest in the freezer in serving size portions. I love cooking multiple meals at once!!!
