I'm spazzing all around too. Some of mine are obviously related to sodium but I'm not sure that is ALL it is because that doesn't explain other times. I'm still waiting to see what long term is like.
So no answers... but letting you know you aren't alone with mystery spikes!
I have them too, and they drive me insane. I know that fluctuations are normal, but I can't help but get down on myself when it happens. Sometimes I'll be up as much as 5 pounds! Sometimes I'll go back down within a day or two, but it can take up to a week.
How does your overall weight look over time? Are you generally going downhill? If so, I wouldn't worry about it. I've personally stopped weighing daily because the little spikes don't mean a whole heck of a lot and were making me overly-obsessive. I weigh one day a week and leave it at that, which prevents me from letting the scale dictate my mood every morning.
We're not machines - expect variable outputs on the scale based on the inputs of your body. Exercise, hormones, certain foods, weather, these all can affect your weight on a given day. But your overall fat and lean mass? Not so much. Just watch the trend line - if it is generally downward, the spikes are your body working just like it should given that you are an organic creature
Seriously, spikes, even big ones, are perfectly normal. You don't have to embrace them, but it would behoove you to ignore them and not stress about them.

I have major food intolerance that will make my weight fluctuate all over the place. Last Saturday and Sunday, due to very unexpected circumstances out of my control, I got out of my normal routine and spent two days practically living on hospital cafeteria food/fast food. While my calorie intake wasn't too bad, my food choices where terrible. By Monday, I had gone up 10lbs. For me, that's really not abnormal when I eat grains and corn. I expected it (not that it made it any easier to see) and it does take a few days to come back down (I have one more pound to go). You may want to track the food you eat and see if you can find a pattern of foods you eat versus the days you have spikes in your weight. You may also want to look at the ratios of protein/carbs/fat you have and see if there is a pattern there as well.
The same thing is happening to me! How can you gain 5 pounds overnight? I don't get it. My mom said I could be bloated, because it'll be that time for me in about a week. It's just very frustrating.
I understand how you feel, weight fluctuations drive all of us insane. Since you're noticing such big fluctuations, perhaps you should consider weighing yourself only once per week, rather than every morning. There's really no point in getting frustrated if your overall weight is dropping. I'm not really sure what could cause these spikes, however, I don't think it has anything to do with your diet. Water retention most likely, but sodium can't be the only one to blame.

From Oct 11 to today my weight is fluctuating between 161.8 and 168. 2 days back it was 160.2 today 159.4.
Off course, now I am on strict proteine vege diet for last 3 days. But I allow myself 2-3 sunchips, 1/2 rusk about 17 calories with tea.
I do not know what to do, I feel like eating some carbs in evening with tea.
