Regarding zucchini -- I like it in pretty much any stir fry but I also love it on its own -- stir fried with just a little canola oil, some curry powder and a small dash of soy. Yum! :)

Zucchini is great in/on anything Italian w/a tomato sauce. It pretty much takes on the flavor that it's simmered in. We eat it a lot! I'm actually going to buy a tool that will slice it 'noodle style" and start replacing some pasta w/Zucchini.

i love grapes too <3 yummy.

my re-discovered food is more of a meal. i make a tuna salad with just tuna, a handful of parmesan cheese and italian red pepper dressing that's soooo good. i actually ate it for dinner today. very low cal if you watch your servings.

I am really loving mushrooms right now. They are so super in stirfrys or in a quick omelette for breakfast. Love!

As for zucchinis, one of my favourite things to make with them is a Lebanese recipe I learned from my nanna. It basically entails hollowing out a little of the inside of the zucchini and stuffing it with a mix of fat free mince and rice (basmatti for low GI!), seasoned with a little salt and pepper, all spice and cinnamon. After they're stuffed, they're then placed in a saucepan full of crushed tomatoes to cook (covered) on low until everything is cooked through. Super tasty and has veg, protein and a little carbs in one meal! Yum!

Also, I am loving sunnigunni's pesto idea, I am going to try that one out soon!

I have re-discovered a few foods. One is Humus! O so good! Another is actually a meal I make often. I take a tomato and slice it, lay the slices on a plate. Then, I make really thin slices of fresh mozzarella and lay those on top. Sprinkle with fresh basil and a little balsamic vinegar and I am a very happy girl!

I've forgotten how much I love salad and how fun it can be to try new things in them. Today was a regular lettuce, tomato, feta but threw in some chick peas and a couple of anchovies and it made a great lunch. I don't feel like I'm depriving myself either.

Even though berries are a little expensive around here, I decided to treat myself to them to put in my oatmeal or just for a snack. So I buy blueberries, raspberries and blackberries pretty regularly and I really look forward to eating them in the morning.


I also have been making omelets with egg beaters and fresh veggies. I saw on Food Network one time where you can add oven-roasted cherry tomatoes to omelets. YUM! Just pop some grape or cherry tomatoes in the oven for about 15-20 minutes at 375 (until they burst) and you'll have a sweet treat to add to eggs or pasta! I also add fresh mushrooms, fresh spinach, scallions and a tiny bit of cheese to my omelets. Really good, and good for me too.
