Default Mussings About Nutritional Info

The other day I didn't have time to pack lunch for work so I stopped at Shop Rite to pick up one of their prepared foods. The nutritional info is right on their packaging and I found Eggplant Rolatini with almost too-good-to-be-true numbers! The dish was Eggplant (breaded with a small amount of whole wheat flour) rolled around ricotta and parmesan cheese served in tomato sauce. It rang in at 60 calories per serving and a few grams of fat and the package had 2.5 servings (there were 4 fairly large "rolls," the package weight was 12 oz. I think). How can this be? Even if they used low fat cheese? It was soooo delicious and sooooo rich tasting!! I want to pick it up again today for my lunch (my stupid refrigerator/freezer isn't working so I can't keep much fresh food in the house right now) but I can't help but think it's too good to be true and that maybe I shouldn't be getting it because the nutritional info is incorrect. But isn't that illegal or something? I dunno.....

It's impossible to tell because the whole label isn't there to know for sure, but if you look up the main ingredients you'll get this:

eggplant 3.5 oz 35 cals
tomato saue 1T 18
parmesan 1T 22
ricotta 1oz 39

which comes out to 114, but if less cheese were used, then it is possible to be lower.

Oh boy, don't you love it? Funny how 4 rolls are 2.5 servings. If you would just eat 1 serving that would be 1 3/5 of a roll....lol Food packaging is so crazy! It sounds too good to be true, but maybe not...eggplant on it's own is very low calorie

Parmesan cheese is wonderful - it's been one of my favorite tricks since dieting - so much flavor and a little goo packed in just a few calories. It can really make a dish expand in the richness department. And whole wheat flour - wow - that sounds like a find!
