Earth Day is Wednesday April 22 and I'm going green....
Well, I'm going to eat more greens...
Plain and simple.. I just don't eat enough veggies, so my Earth Day pledge is to support my local farmers and eat at least 2 more cups of veggies per day...
I bought extra veggies today and I start tomorrow, hopefully by the 22nd, the extra veggies will have made a difference... My goal is 4 pounds..
I like this idea, so I think I'm going to steal it and do the same thing. The one place I still really lack in on my diet is my (lack of) vegetable consumption. I do like some vegetables, but only about 10 different kinds in total, and I don't even eat THOSE frequently enough. Cheers to going (and eating) green!
So far, so good... Had broccolli at lunch and a whole bag of Spinach tonight with my fish... fresh green beans and asparagus on the menu for tomorrow. Yum..
