    I really don't like those green guys!

    Tried, but (with the possible exception of the occasional brussels sprout) they aren't a happenin' thing in my future.

    To be honest, I'm pretty much off the vege-a-day challenge now as it's been two days since I had anything. I'm somewhat hopeless, but am going to try that dip thing today!!
    Your not hopeless, it just takes time to get used to anything. I used to HATE veggies but as I get older and older and taste them with different seasonings and sauces I'm learning to really love them. I still can not eat broccoli w/out something on it like olive oil or mixed in my meal LOL. But I figure if a person can aquire a taste for cigaretts and beer then I can aquire a taste for plain broccoli right !!

  • I've been getting in my veggies, but mostly in tomatos, cucumbers and onions...nothing really exciting to report there, especially since these are things I've always liked and eaten and part of this challenge was to try new things (at least for me) I finally broke down and ate the squash and cauliflower last night. I tossed it in a little olive oil, Nature Seasoning, Garlic Poweder, and salt and put it in the oven uncovered at 350 for about 35 minutes. I turned it twice during cooking. It actually turned out pretty good! The squash turned out really sweet. The cauliflower was pretty flavorless, but mixed in with the squash, I couldn't really "taste" it and it added a nice texture to the otherwise mushy squash, so overall it was pretty yummy combination. I would eat it again....and probably will tonight since I still have a lot of squash and cauliflower leftover and I've eaten all the veggies in the fridge I like.
  • ok right now I am eating cauliflower...I got scared when i took it out of the microwave because it smelled just like broccoli!! So I drained it, threw it in a ziplock and mashed it up (im poor and dont have a blender! lol) and added some heavy cream and minced garlic anc butter and cheese! Home made mashed cauliflower! hehe
  • I love your idea of mashing veggies in a ziploc bag! I'd never thought of that. Sure beats pulling out the mixer for making one serving of mashed potato - then doing the dishes after!


    I made a veggie stir-fry with broccoli, red bell peppers, onions, water chestnuts, and a broth that was flavored with ginger, garlic, soy sauce, and slightly thickened with corn starch. I honestly did not expect to like it, because I'm not a big fan of stir-fry, plus I'm not a big fan of a veggie plate I was tinkering with a recipe for someone, to make it healthier.

    I really surprised myself, I ended up cleaning my plate

    haha it was all i could think to do...i wish i did have a blender i would have happily washed those dishes! lol...the only thing about mashing cauliflower in a bag with your hands is that you can never really get it the same texture as mashed potatos...it was still a little stalky!

    Oh yeah also last nigth I went to burger king and got a bacon cheddar randch burger plain adn dry, and threw out the bun (atkins legal, heh) and I tried to eat the tomatos on it, but I almost puked...they were like...sour tasting...guess fast food places don't keep the freshest tomatos around...but that taste last night is the reason I never ate them to begin with. I guess I just gotta find the good ones! Not the ones that have that sour jelly-like pulp inside! ew
  • Is everyone else still getting their daily veggies? I had a tomato salad for lunch. It had tomatoes, onions, a little bit of shredded carrot, and an olive oil and red wine vinegar dressing. I was supposed to add fresh basil, but I forgot until it was too late. It was pretty good. It's not something I'd want very often, though. I also had a toasted english muffin on the side, because it's what I happened to have on hand, and I really needed something different to add another texture to my meal.
  • Suzanne, here's an alternative. Slice the tomato, onion, basil and set aside. On the muffin, put on a little FF or LF butter spray (or spread), a sprinkle of thyme (fresh or dried) garlic poweder and a touch of salt. Then top with FF mozerella and toast until the cheese melts. As soon as the muffin is out of the oven, top with the tomato-basil mix. Umm...yummy.

I know its been a while, i havent gotten a new veggie every single day, but im adding about 2 per week...this week im adding zucchini and squash (bought the frozen bag mix) and Asparagus, which I had last night...it was actually pretty good! It kind of reminded me of a taste of corn and green beans put together. yumm!
  • I tried that recipe with the portabello mushrooms, I put some olive oil and sea salt b/4 grilling, then after they were grilled put the garlic hummus and feta cheese on it and skipped the bread.. LORDY was it good and best of all EASY PEASY.

    Break, fast food veggies ARE gross.... I often wondered if they are actually veggies LOL. Glad you got your cauliflower in, I love cauliflower, I like it w/a tad of butter & salt or in the Mock-tater way you made it. Did you know you can take Cauliflower and make a mock potato salad with it, no not mashed, like cold potato salad. But use the frozen kind it holds up better and won't be mushy. I think I posted it on the atkins site (some where lol). Another good way to eat broccoli is the broccoli salad I posted there too. its with bacon, splenda, red onions, mayo mmmmmmmmmmm !!!

    Solus, good for you and the alfalfa sprouts yes they are a veggie, they are actually really good for you, low in calories (approx 20 calories / cup).
  • Yum, that mushroom idea sounds good! I love just about anything on a grill.

    Except cauliflower, of course. Leenie, cauliflower is bad for you! There are rumors that it can decrease your libido. (just the thought of cauliflower turns me off) It can also cause you to become pale and washed out, like a bleached broccoli. Even more alarming, it can cause subliminal cravings for real potatoes!
  • I made mashed potatos last night but by adding in 1 part cauliflower to 2 parts potatos. I threw in some sauteed garlic and onion. It turned out rather tasty.
