I'm scared of sweet potato!

  • I make sweet potatoes like I would a baked potato. I just put it in the microwave for 8 minutes after poking it with a fork a few times. Then I slice it open, spray it with some I Can't Believe it's Not Butter spray, and add a little bit of brown sugar. It's delicious. I try and have this as a side dish as often as I can.
  • for me.. I like to boil and mash them, add a dash of milk, then beat them until whipped. I add splenda brown sugar blends on top with some crushed pecans. YUM!
  • I tried them with the oil, garlic salt and pepper, and I felt like the sweetness clashed too much....so I may try them again eventually with sweet instead of salt.
  • One of my favorite ways was to bake them and after they are done, a little butter and 1/2 teaspoon of brown sugar. I had them in a quick bread once, too, with a little applebutter on top.
  • I can't stand them. I tried eatting them the other day and the sweetness is like a carrot gone off and that paired with the texture... made me feel like I was going to be sick. :-(
