  • Ok ladies it's our last week or a new week if you perfer. Lets get this party going I think that carrot is aproperate. maybe it could be our mascote
    I said I would post hear veryday so here I go.

    breakfast same as yesterday Maureen's morning glory salad, 1 banana, grapefruit, strawberries, letuce.

    lunch rasberries, and rainbow slaw,

    dinner not sure yet but I was thinking mexican salad with tofuty now I'm thinking tomato soup I don't know all I know is the house is 90% ETL so I shouldn't go to wronge.

    I didn't eat soup for dinner I had some beans instead then later some cherries and a some tofu spread with carrots.

    My Goal for the week is Four pounds. What is your Goal.

  • Hi G and everyone! I feel I'm only just properly getting the hang of this diet now, so I'll keep on dieting for another 6 weeks methinks.
    Anyhoo, it's good to know what everyone is eating, for new ideas. I actually tried fava beans for the first time ever the other day, but they were mashed and out of a tin, and I didn't like them very much.

    Today I had an ok diet day
    Breakfast:
    Coffee, pint of water, apple, salad (iceberg, tomato, cucumber + light dressing)
    Lunch:
    Two pints of water, 3 large boiled savoy cabbage leaves, 2 tbsp Singapore hot sauce, 1/2 sweet potato, water chestnuts (I nearly exploded after all this food....)
    Dinner:
    Two pints of water, coffee, salad, 1/3 tin of chickpeas

    And for the evening I'm just drinking truckloads of water and watching a film

    By the way, do you measure the weight or volume in cooked vegetables?
    My UK version of the E2L book says eg. 500g cooked vegetables. I have read the book from cover to cover, and nowhere have I spotted whether it's 500g pre cooking or post cooking. It would kind of help in estimating if I am doing about the correct amounts. The cabbage was so filling it was unbelievable...
    And kale recipes would be taken with gratitude! I've just boiled it in a small amount of water, and then used the water to fry vegetables such as aubergines and crushed tomatoes.
  • hello I sounds like you had a good day I'm not sure but it was my understandinf that you are to eat a pound of cooked and a pound of raw. have you seen what a pound of letuse looks like good night wow thats a lot of food. I would think that it would be 500g cooked. good luck.

    dinner I'm thinking shatakie noodles with mareinara and some water mellon or a cucumber with "ranch dressing"

  • I'm feel a bit testy this morning I woke you with a headach and was swolen and up a pound I'm so scared I 'll gain a pound for tomorows weigh in that would so suck. I did eat a sandwich from quizonos and had some grilled porta bella in the cafitria yesterday so maybe thats it. I also ate an extra banana yesterday a stress related incadent. wish me luck for today.

    breakfast kale and bean soup a peace of fruit from the cafitria not sure what kind yet.

    dinner cucumber with "ranch dressing" and watermelon and maybe some cherries.

    I have decided that if I stay the same this week that will be fine but I'm hoping for a loss.

  • hello all, I'm back in town and back online!

    Between traveling and being really sick, I've gone off of the plan, but I've still lost a few pounds.

    I'll be continuing with the plan past the six-week point, so maybe after this week we can start an ongoing thread for those who want to continue?

  • Hello again! I too plan on starting over/continuing since I've been so inconsistent. I've noticed that I eat pound upon pound of fruit and lots of beans but still, very little veggies. I now have lots of veggie recipes so I have no excuse. I'll share my kale recipes with everyone.

    San, I agree with Domino, I think its 500g cooked weight. Lots of food if you can "stomach" it!
  • G, I don't have a weekly weight goal. I'm frustrated b/c I wanted to be at least 10 pounds lighter by now but have lost only 5, if that. I'm afraid to weigh right now.
  • Kale Recipes
    Blanched Kale: Stem 2 pounds kale and coarsely chop. Place in 2 quarts boiling water with 1 1/2 teaspoons salt for 7 minutes. Rinse under cold water. Drain. Squeeze dry. Chop into desired size. Blanching bitter and tough greens like kale removes some bitterness and helps softens the leaves. I suppose you could eat them as is after blanching. However, most of the recipes I have suggest further cooking as follows:

    1. Braise blanched kale with 1/4 c. olive oil and 1/4 cup vegetable broth for 5 minutes OR

    2. Saute onion and chopped garlic in 2 T. olive oil. Stir in blanched kale. Add 1/4 cup chicken (oops! vegetable!) broth and heat for 2-3 minutes. Sprinkle with 2 teaspoons cider vinegar and season to taste. OR

    3. Saute 2 large garlic cloves (sliced thin) and 1/4 teaspoon red pepper flakes in 2 T olive oil. Stir in blanched kale. Add 1/2 cup broth, cover and cook for about 5 minutes until greens are tender. Variations:
    a. saute 1/2 thinly sliced red bell pepper in oil before adding garlic, etc OR
    b. add 1/3 cup pitted and chopped kalamata olives just after garlic starts to sizzle. After greens are tender, stir in 1/4 teaspoon grated lemon zest just before serving

    4. Stir blanched kale into mashed potatoes, or cooked rice.

    5. Add blanched kale to stuffed green peppers mixture

    6. Stir blanched kale into your favorite soup or stew
  • Hi ladies I'm glad the gangs all here as it turns out I lost 9.5 pound in our six weeks It wasn't easy but I know that I have made some changes that are posative and I'm excited to continue. I also joined Dr. Furhmans web site wich I recomend it's $34 dolars for six week then 7 $a month after that. It has a great message board and recipe ariea and such if you can afford it, It's worth it. Today was Wednesday Weigh in day and I was down 1.75 pounds. It's also wednesday cheat day and food that I use to eat tasted funny to me and I feel kind of icky the restrant we go to is not ETL friendly and asking them to changes resterants after so many years is just not an option. I do really like going out to breakfast and it's not something I willing to give up for ETL so I guess I'll just have to ajust.

    Here is a kale recipe I made this week it was really good I'm still eating it.



    Kale and Bean Soup

    This is a great vegetarian dish from my collection.

    1 tablespoon olive or canola oil
    6 to 8 cloves garlic, crushed or minced
    1 large onion, chopped
    4 cups kale, chopped if fresh (you can use 2 or 3 packages
    frozen or 2 to 3 cans)
    4 cups chicken or veggie broth
    2 (15 ounce) cans white beans, any kind
    1 can stewed tomatoes or chopped fresh tomatoes
    1 teaspoon dried thyme
    1 teaspoon rosemary
    Salt and pepper to taste
    1 cup chopped parsley

    In a large pot, heat olive oil then add garlic and onion. Sauté until soft. Add kale and sauté until wilted. Add 3 cups of the broth, 2 cups of beans, tomatoes, herbs, salt and pepper. Simmer 5 to 10 minutes.

    Use a blender, or what have you, to mix the remaining beans and broth until smooth. I bet you're asking why. It's to thicken the soup. Mix into soup. Simmer for 15 to 20 minutes.

    Okay, I will kick myself later for suggesting it but... Let's add an exercise challenge to our Eat to Live Volume 2 when we start another 6 weeks on Monday. Something doable like 120 minutes per week of exercise of your choice. That could be a couple of yoga classes or 3 days of walks around the neighborhood or weight training or whatever! R-U-N? meaning "are you in?" not that I plan on running! Yikes, I'm going to press submit now...

    BTW, congrats on 9.5 pounds lost gggbdomino!

    snack 100 calorie orieo snack

    dinner I have water melon and some celery with tofu spreed on it but it doesn't sound to good tonight I'm not hungery. oh I'm working on a vanilla coke right now in with my water. oh the old habits die hard.

    My weight is stagnating at the moment, I think it could be all the water I'm drinking, and the fact that I do eat salt, as it's present in bran flakes cereal and wholemeal pittabread, and even tinned beans. I seriously don't think I eat too many calories, and I walk a lot as well (1-3h a day). Another suspect is the salad dressing I'm using, about 2tbsp (30ml) a day, and think there are about 60 cal in 100ml. So confusing
    Also I was wondering, are you guys eating the ground flaxseed? I'm not, as I haven't found it, instead I take an omega 3+6+9 capsule.

    So today I've had: small bowl of bran flakes, 2 apricots, 2 pints of water, coffee, 1/2 pint soya milk, an omega capsule, 2 scottish oat cakes. Further I intend to eat a salad (lettuce, cucumber and tomato), boiled savoy cabbage and a bit of various veg in a chinese low cal stir fry sauce.

    I'm doing heavy lifting today, and I was out for a very long walk yesterday, so I'm definitely burning cals off too. I can't wait to shift the excess weight, as I'm hoping it'll ease my backpain.

    I have flaxseed but haven't done anything with it.

    I am eating better than I used to but I don't think that I'm doing E2L properly. My concerns are still- oil in hummus and dressings plus processed foods like tofu and wraps "violate" the initial 6 week plan. However, I don't want to be disciplined enough to avoid them for 6 weeks. Perhaps I'm misinterpreting the plan. Any input you more experienced ones have is appreciated.

    Oh! And I love between meal snacks! I will not give those up for any length of time. I cannot imagine living without my midmorning food break. It makes me nauseous to wait until lunch. Of course, my breakfast is usually before 7 a.m. so it's no wonder I snack again before noon. I can make it the afternoon without a snack most days. It's the same period of time (5-6 hours) but I don't usually get queasy.

    I'll be leaving this afternoon until July 5th so I may not be online until then. Enjoy your weekend. Americans, celebrate our freedom.
