  • Judy, I'm going to try that! And OP, have you tried tempeh? It's a nutty-tasting soy product that's a higher-quality and more digestible protein than tofu. Very easy to cook with (stir-fry slices of it with any veggies, or I like to toast it with no oil in a frying pan and eat with a little ketchup - delicious).
  • I really like to eat rice with sauteed veggies like peppers, mushrooms, onions, and broccoli (but of course you could use whatever veggies you like). I like to cook A LOT of veggies per serving of rice so there's more nutrients and good things in there. I usually eat this with some peanut sauce as that's my favorite. I also like to make scrambled eggs with lots of veggies, or my own burrito bowls. I make a little rice, then add lots of lettuce, black beans, corn, salsa, and avocado. Sometimes some sauteed peppers or tofu in there too. It tastes amazing and is super filling!
  • I find tofu works well roasted (cubes and spices then oven baked). Stops it falling apart and works on salads or stirfry's / with veggies etc.
