Default Dinner time help!

Hello all! I have a question....

My boyfriend and I live together and I am veg*n, he is not. We don't eat breakfast or lunch together, just dinner. I want to eat lighter, plant based meals, so he agreed to eating vegetarian at night. But when I cook dinner for him, he wants heavy, cheesy dishes. Then I find myself 5 lbs heavier almost immediately. He could eat a buffet 3 times a day and still have a slim, perfect body. It's not fair!! If he eats what I want, he loses too much weight. What do you all suggest, make different dishes for each of us, or find a happy medium? All replies are appreciated, thank you!!

If he does not want to eat what you are cooking, then he should cook for himself. I've been eating separate meals to the rest of my family for the past four months.

If I were him, I'd take it and add cheese. Simple.

I'm almost to that point. We just need different foods, amounts, ect. But on the other hand, I have this traditional need to cook a nice dinner for he and I! I don't know why.

How is your boyfriend with salads? You could do a at home salad or soup bar and add seperate toppings. You can keep your vegan he can mix in meats and cheeses. Stuffed shells.
With summer you can also do kabobs. Lettuce wraps. Noodle bowls.

My omni fiance is a BIG cheese fan, and he has loved the recipes I have made from the cookbooks Happy Herbivore and Everyday Happy Herbivore. If you want to try some of the recipes before you buy a book head to happyherbivore.com and go to the recipes part. I have made the:

Apple crisp muffins
Black bean burgers
Carrot cake cupcakes
Chocolate cupcakes
Cinnamon bun smoothie
Hawaiian bbq teryaki chickpeas
Tofu yogurt
Lasagna rolls (cheesiest tasting thing I have ever eaten with NO cheese in it)
Spicy orange greens
Tofu scramble
Veggie biscuit pot pie

All of these are SUPER easy recipes, and we both loved all of them. I really can't say enough good things.
