I took 2 of my vacation days today and tomorrow and no one else is home here sooooo....I'm going on a cooking spree!!! YAY!!! LOL! Sorry I just had to share my excitement since these moments only come a few times a year! I'm cooking and freezing all day and I'll be set for a month! Woohoo! Yea I really need my own apartment hee hee!

Well I just recently bought this soup mix by Red Mill. It says veggie soup mix on the front if I remember correctly. It's a 28 ounce bag but makes a full pot of soup! There's no salt and very little seasonings so I add my own. It's basically like a split pea soup but with other stuff like lentils, barley, etc. I'll usually freeze most of that and somtimes I'll make kitchen sink minestrone, veg lasagna, also pasta sauce. I make a whole lot of everything and break it up into smaller containers before freezing so it's like healthy fast food for me!

that is the best idea ever!!! i think i will do the same tomorrow im off and i was gonna makes some stuff anyways so i might as well make enough to freeze~ man gypsy you are sweet!!! hehe share the excitement!!!!!

I just did one cup each of barley, bulgar and kamut. When cooked, I put a single serving in bags in the freezer. I can use them in soup, salad, for breakfast ...

I'm pretty sure I learned that here on 3FC
