Menus and keeping it interesting
As we progress into this new year, I'm requesting that we have "open fire" nights at home. We did this last year when I gave up anything on 4 legs for Lent. I'd like to bring it back on a permanent basis. I like fixing something different for myself whenever he wants something I don't. I don't have a problem making what I want and sharing it with him. It's just that I want to start the meat going away more often.
If I manage to get in 2 per week to start, I'm going to want something other than a big salad.
What you do serve and how can I keep it interesting? I can't have nuts of any kind, seeds or corn. I am allergic to avocado and I hate collards and eggplant.
