Default Jeed a good vegetarian(ish) cookbook for MIL

About a week before Thanksgiving, my mother-in-law told us she has decided to become a vegetarian, though in talking to her, it seems that rather than truly vegetarian, she plans on giving up red meat, eating fish frequently, and poultry occasionally, (she made it clear she would be having a turkey on Thanksgiving day). (In our area of Wisconsin, this pretty much passes for vegetarian, at least among the "older folks.")

I gave her some of my low and no meat recipes, but was looking for a good "transitional" cookbook. Maybe a bean and grain cookbook, or something without too many ingredients she wouldn't recognize (tvp has her a little stumped).

I ordered "The Gradual Vegetarian," which I used to own, and really liked (and in fact, may have to order a second copy for myself, as I can't find my copy), but was wondering if anyone has some other suggestions, maybe of a newer book (maybe with some lovely photos) that would make a nice Christmas gift.

My mother gave me a copy of Deborah Madison's Vegetarian Cooking for Everyone and it's a fantastic cookbook with a wide range of recipes, and it's huge.

The Mousewood restaurant cookbooks are great, and she won't be discourage by foreign-sounding items in the ingredient lists! I really recommend them.

I would also recommend the Vegetarian cooking for everyone cookbook. I have it and like it al ot.
